In honor of National Seafood month, we went to the Prime Rib atLive! Casino & Hotel to get our grub on. We know how that sounds, nomsters! Indulging in seafood at a steakhouse called the Prime Rib? Clearly, they specialize in meat, but trust us when we say they don’t mess around with fish. Their day boat menu was seriously ridiculous, like some of the best seafood we’ve ever had in our lives ridiculous.
With locations in Baltimore, DC and Philly, they’ve been serving dishes of THE highest quality for the last 40 years. We’ve tried their restaurants in Baltimore and DC, but their Live! Casino & Hotel location is by far our favorite. Firstly, their food’s better, and secondly, the atmosphere’s cooler. It’s still classy and sophisticated, but there’s a trendier vibe here that we really dig.
For our meal, Eric Littlejohn, the Prime Rib’s Chef de Cuisine, sent out 7 beautiful dishes for us to try. His goal with the day boat menu was to feature delicious sustainable seafood dishes for guests on the daily so it changes weekly depending on what’s fresh. He’s partnered up with local and regional purveyors to highlight the freshest fish and shellfish in the area so you KNOW that you’re going to get something good when you walk through their doors.
The first dish was a truly spectacular plate of tuna. Chef Littlejohn cold smoked and seared it for a unique and delicious flavor and served it in a wasabi-ginger beurre blanc with sautéed mushrooms and spinach. Everything from texture to taste was on point, and we loved the subtle taste of smoke.
Next up was the Caribbean style red snapper. Cooked in a coconut milk and fish stock, this baby was served with red and yellow peppers, onions, ginger and tomato – a similar flavor profile to a Jamaican escovitch.
Just look at this plate. It’s almost TOO pretty to eat – key word, almost.
Then came sea bass served two ways on a blueberry gastrique, accompanied by a refreshing citrus salad. This may have been our favorite of the night, but it’s tough to say because everything was so damn tasty. The flatter part was sea bass cheek, and it kind of tasted like crab. The texture was stringy, which contrasted beautifully with the juicy fillet. The former was marinated in citrus, olive oil, garlic, ginger, and thyme, while the latter was prepared in orange juice, garlic and ginger.
Onto the seared grouper, which was served on top of a seafood risotto and garnished with crispy fried onions.
…and the King salmon with maple bacon butter…
…and their Maryland rockfish served with lump crab meat and micro greens in a basil balsamic vinaigrette, topped with a crystallized pansy. This dish was, hands down, one of the most beautiful plates ever, and we may or may not have taken 200 photos of it. #dontjudge #isntitprettythough #seriously
And last but not least, their MD crab cakes. If you’re a fan of crab, this dish is an absolute must-try. We mentioned this already, but Chef Littlejohn and his culinary team don’t play around. These babies are 98% crab unlike the other “crab cakes” restaurants sell, and each bite was absolutely sublime.
