Anyone else a huge custard fan? I love a good egg tart, and while this air fryer custard is not that, it is a seriously delicious custard dessert in its own right. You cook a simple milk custard on the stove, chill it until it sets, slice it, brush the tops with egg wash, and air fry until golden. What you get is a subtly sweet, milky flavor and a creamy texture that is SO satisfying to bite into. And it is CRAZY easy, just five ingredients you probably already have (really it is milk, eggs, and cornstarch with sugar and vanilla for flavor).

What Makes This Air Fryer Custard So Good

The magic here is cornstarch. Whisked into the milk and eggs and cooked low and slow, it thickens everything into a smooth, set custard you can actually slice, no water bath and no fussy baking. Then the air fryer does something fun: the egg-washed tops turn lightly golden while the inside stays cool, creamy, and dense. It lands somewhere between a set custard and a crustless egg tart filling.

That cornstarch-custard base is the same shortcut I use for the filling in my Air Fryer Creme Brulee Toast, except there it gets torched with sugar and spooned into crispy bread instead of sliced. Once you get the hang of cooking it until it coats the back of a spoon, you can take it in a bunch of directions.

Can You Put Custard in an Air Fryer?

Yes, you can put custard in an air fryer, as long as it is already set firm. This recipe cooks the custard on the stovetop and chills it for 2 hours first, so it holds its shape when you slice it and the air fryer only has to crisp and brown the top. Do not pour a liquid custard base straight into the air fryer basket, since it will not set right and can run everywhere. Set it first, slice it, then air fry.

What Temperature Should You Cook Custard At?

For this air fryer custard, cook the slices at 320F for about 20 minutes. That lower temperature is on purpose: custard is delicate, and blasting it too hot makes the eggs seize and turn rubbery or grainy instead of staying silky. Low and slow is the whole game with custard, both on the stove and in the air fryer.

Tips for Making Air Fryer Custard

Stir constantly so it does not clump

Once the custard base hits the heat, do not walk away. Stir continuously with a silicone spatula as it thickens, scraping the bottom, so the cornstarch does not form lumps or scorch. If you do get a few clumps, keep stirring off the heat until it smooths back out.

Chill it fully before slicing

Give the custard the full 2 hours in the fridge, covered with plastic wrap pressed onto the surface so it does not form a skin. It needs to be completely set and cold, or the slices will slump and stick when you try to move them to the air fryer.

Cut smaller slices (learn from me)

When I made this, each piece came out as a LOT of custard, so next time I am pouring it into a wider container for a thinner layer and cutting smaller slices. If you like a lighter portion, do the same. A shorter, thinner custard also browns a little more evenly on top.

Do not skip the egg wash

Brushing beaten egg over each slice is what gives you that golden, glossy top in the air fryer. Without it, the custard stays pale. A thin, even coat is all you need. Storage and Leftovers

This air fryer custard keeps well in the fridge, which makes it a great make-ahead dessert. Store the slices in an airtight container for up to 3 days. It is best eaten cold, straight from the fridge, when the texture is at its densest and creamiest. I would not freeze it, since custard tends to get watery and grainy once thawed.   2. Pour the mixture into a sauce pan over medium-low heat. Stir continuously with a silicone spatula until it thickens up. Remove from the heat and keep stirring until it is totally smooth.
  3. Transfer the custard to a cake pan or shallow container, cover with plastic wrap pressed onto the surface, and chill in the fridge for 2 hours.
  4. Once set, turn the custard out and cut it into slices. Beat an egg in a small bowl and brush each slice all over with the egg wash.
  5. Air fry at 320F for 20 minutes, until the tops are lightly golden.
  6. Let cool until the pieces are firm enough to pick up, then enjoy.

One thing I’d change: cut it thinner than you think you need to. Mine came out as a lot of custard per piece. The flavor and the texture were right, it was just more than one serving really wants to be.

Smaller slices also make it easier to hand around, which is how I’d serve it now. 🙌
