Scale
- 2 Eggs
- 3 tbsp granulated sugar
- 1/3 cup Corn Starch
- 2 cups whole milk
- 1/2 tsp Vanilla Extract
- 1 Egg, beaten (for egg wash)
Equipment
- Mixing bowls
- Whisk
- Sauce pan
- Silicone spatula
- Air fryer
- Basting brush
- Cake pan or shallow container
Instructions
- Whisk the base. Whisk the eggs, sugar, corn starch, milk, and vanilla in a mixing bowl until fully combined and smooth.
- Thicken on the stove. Pour into a sauce pan over medium-low heat and stir continuously with a silicone spatula until it thickens. Off the heat, keep stirring until totally smooth.
- Chill to set. Transfer to a cake pan or shallow container, cover with plastic wrap pressed onto the surface, and chill 2 hours.
- Slice and egg wash. Turn out the set custard and cut into slices. Beat an egg and brush each slice all over.
- Air fry. Air fry at 320F for 20 minutes, until the tops are lightly golden.
- Cool and serve. Let cool until firm enough to pick up, then enjoy.
Notes
- Stir the custard constantly as it heats so the cornstarch does not clump or scorch.
- Press plastic wrap onto the surface while chilling so it does not form a skin.
- Chill the full 2 hours; the custard must be cold and set to slice cleanly.
- Pour into a wider container for a thinner layer if you want smaller, more evenly browned slices.
- Do not skip the egg wash; it is what gives the tops their golden color in the air fryer.
