This air fryer Korean cheese katsu is a cheese tonkatsu recipe that delivers a CRAZY crispy panko crust on the outside and a hot, stretchy cheese pull on the inside, all with zero deep-frying. Gooey cheese makes everything better. That is literally just a fact.

What Makes This Cheese Tonkatsu So Good
The freeze step is the secret no one talks about. After you roll the mozzarella inside the tenderized pork and wrap it tight in plastic wrap, you freeze it for 30 minutes before breading. That keeps the roll sealed when it hits the heat, no unraveling, no cheese escaping before you want it to. When you finally bite through that crunchy panko exterior, the mozzarella is fully melted and ready to pull everywhere.
Air frying at 360F for 9 minutes per side gives you a legit golden crust without any of the mess of deep frying. The result is SO good, and you made it right in your own kitchen. You made it in your kitchen!
What Is Cheese Katsu?
Cheese katsu is a cheese-stuffed version of tonkatsu, the classic Japanese breaded pork cutlet. The mozzarella gets rolled inside the pork before breading, so the filling stays melty and hot inside the crispy panko crust. It became a popular dish in Korea as cheese donkatsu and has been a staple in Korean restaurants for years. Tips for Making the Best Air Fryer Korean Cheese Katsu
1. Get the pork thin.
Start with 1-inch boneless pork loins, cut each all the way through to make six 1/2-inch pieces, then pound each one down to about 1/8 inch with a meat tenderizer. If the pork is too thick, the inside won’t cook through at the same rate the panko crisps up. 2. Freeze before you bread.
Wrap each roll in plastic wrap and freeze for at least 30 minutes. Non-negotiable. It holds the shape so the pork doesn’t unravel during breading and cooking.
3. Set up your dredge station right.
Two wide, shallow bowls: one with the beaten eggs and flour whisked together, one with panko. Dunk each roll in the egg wash, then roll it through the panko and press gently so you get an even coat all the way around.
4. Spray the oil, don’t skip it.
A light coat of oil before they go in the air fryer is what gives you the golden-brown color. A refillable culinary spray bottle with avocado oil works great, or store-bought non-stick spray does the job fine. The panko-and-air-fryer method is also what I use in my crispy salmon katsu bites, where cubes of salmon get the exact same flour-egg-panko dredge and cook katsu-style at 350F.
5. Don’t skip the katsu sauce.
Bottled katsu sauce is perfect. Top with sliced chives or green onion for color, and serve with katsu sauce. All optional, all legit!

Storage and Leftovers
Store in an airtight container in the fridge for up to 3 days. Reheat in the air fryer at 350F for 4-5 minutes to bring the crunch back. Microwave works in a pinch but softens the coating, so the air fryer is the move.

- Preheat the air fryer to 360F. Set up two wide shallow bowls: whisk the beaten eggs and flour together in one, fill the other with panko.
- Remove the rolls from the freezer. Dunk each one in the egg-flour mixture, then coat in panko, pressing gently for even coverage all around.
- Lightly spray each piece with oil, then air fry for 9 minutes. Flip, spray the other side, and air fry another 9 minutes until golden brown.
- Cut each piece lengthwise or into rounds. Top with chives or green onion if using, and serve with katsu sauce.
The cheese pull is the reason to make this version, but the katsu underneath still has to be right. Pound the pork properly thin and the coating gets its shot at going crisp before the mozzarella finds a way out.
It’s a dinner that feels like a lot more work than it actually was, which is exactly the kind of thing I’m after. 🙌

Notes
- Freezing before breading is what keeps the rolls from unraveling during cooking. Don’t skip this step.
- Give the pieces space in the air fryer basket so the hot air can circulate and crisp all sides evenly. Don’t stack them.
- Cutting the rolls into rounds gives you that dramatic cheese-pull cross-section. Cutting lengthwise shows the full mozzarella center.
