Can you make Korean short ribs without a grill?
Yes, and the air fryer might be the easiest way to do it. The air fryer’s intense circulating heat sears the outside of the short ribs and caramelizes the sugars in the marinade, giving you those crispy, charred edges you usually only get over flame. No grill, no broiler to babysit, no setting off the smoke alarm.
What is the difference between galbi and kalbi?
There is no difference. Galbi and kalbi are just two romanizations of the same Korean word for short ribs. You’ll also see it written as LA galbi when it’s the thin, flanken-cut style (sliced across the bones) that is most popular for Korean BBQ, and that is exactly the cut this recipe uses. How long do you cook galbi in the air fryer?
Air-fry galbi at 400F for 7 to 8 minutes. Cook the short ribs in a single layer so the hot air hits every piece. Even if your air fryer has multiple racks, use only one at a time, or the ribs on the bottom will steam instead of sear. Thin flanken-cut ribs cook fast, so check them at the 7-minute mark. Do you have to marinate galbi overnight?
Overnight is best, and a full 24 hours is even better. The longer the short ribs sit in the marinade, the deeper the flavor and the more tender the meat. If you’re short on time, a few hours still works because store-bought galbi sauce is concentrated, but plan ahead when you can. Flip the bag halfway through so both sides soak evenly.
What makes these air fryer galbi so good
It is all about that contrast: sticky, caramelized edges against tender, juicy meat, with a savory-sweet glaze that clings to every bite. The flanken cut means lots of surface area, so more of the rib gets that crispy char. Tips for making the best air fryer Korean short ribs
1. Use the flanken (LA) cut
Flanken-cut short ribs are sliced thin across the bones, so you get little nuggets of bone and a lot of caramelized surface. They cook in minutes, which is what makes this an air fryer recipe instead of a long braise.
2. Marinate in a zip-top bag, laid flat
A bag coats the ribs better than a bowl and takes up less fridge space. Press out the air, lay it flat, and flip it once partway through so every rib bathes in the marinade.
3. One layer only
This is the rule that makes or breaks it. Crowding traps steam and you lose the char. Work in batches if you need to, the same way I do with my air fryer Spam musubi katsu.
4. Rest the ribs at room temperature first
Pull the marinated ribs out of the fridge about 30 minutes before cooking. Starting closer to room temperature helps them cook evenly instead of staying cold in the center.
5. Finish with green onion and sesame
A shower of sliced green onion and toasted sesame seeds isn’t just for looks. It adds freshness and a little nutty crunch that balances the rich, sticky glaze.
Storage and leftovers
Store cooked short ribs in an airtight container in the fridge for up to 3 days. Reheat them in the air fryer at 350F for a few minutes to bring back the crispy edges (the microwave makes them rubbery). These also make incredible leftovers tucked into rice bowls or lettuce wraps.
