If you love spicy salmon sushi but don’t want to deal with raw fish, these air fryer spicy salmon wraps are about to be your new obsession. I take chopped salmon, mix it with Kewpie mayo and sriracha, seal it inside a sheet of nori and rice paper, then air fry the whole thing until the rice paper blisters into this thin, brittle crunch. You get that umami-packed nori and creamy spicy salmon in the middle, a super crispy shell on the outside, and a legit protein-packed snack that comes off way fancier than how easy it actually is. I’m hooked on these, and I think you will be too.

What Makes These Air Fryer Spicy Salmon Wraps So Good

It’s the contrast that gets me every time. The rice paper fries up into a light, blistered, cracker-crisp shell, and the second you bite through it you hit warm, creamy spicy salmon and that savory sheet of nori. Crispy outside, soft and rich inside, with a little heat from the sriracha and that unmistakable tangy-sweet Kewpie mayo backbone. It tastes like a spicy salmon roll got deep-fried, except there’s no deep fryer and no raw fish involved.

They’re also just fun to eat. You slice the roll into little pinwheels, so every piece shows off that spiral of nori and salmon, and they’re the perfect two-bite size for snacking or passing around. If you love that crispy-shell-around-a-savory-filling thing, my Crispy Bulgogi Rice Paper Rolls run the same air-fried rice paper trick with sweet-savory Korean beef and melty mozzarella inside.

Do You Need Sushi-Grade Salmon?

Nope, and that’s one of the best things about these. Because the salmon cooks all the way through in the air fryer, you don’t need pricey sushi-grade fish the way you would for actual raw spicy salmon. A regular fresh salmon fillet from the grocery store, or a frozen one you’ve thawed, works perfectly here. Just chop it into small pieces so it cooks evenly in the 8 to 10 minutes it’s in there. If you DO want that raw spicy-salmon experience on a crispy base, my Spicy Salmon on Crispy Rice keeps the salmon raw over crunchy pan-fried rice, so that one’s where sushi-grade matters. For anyone nervous about cooking fish, keeping it fully cooked here takes all the guesswork out (and food safety with raw fish is always worth respecting).

Tips for Making Air Fryer Spicy Salmon Wraps

1. Only dip the rice paper for a second

Rice paper keeps softening after it leaves the water, so a quick one or two second dunk is all you need. It’ll feel a little stiff at first, but by the time you’ve layered the nori and rolled it up, it’s pliable. Soak it too long and it turns gummy and tears the second you try to roll.

2. Roll it tight and seal the seam

Spoon the salmon in a straight line about an inch from one edge, then roll it up snug and finish seam-side down. A tight roll holds its shape when you slice it, and sealing on the seam keeps it from unrolling in the air fryer. This is the same seal-and-fry move as my Teriyaki Salmon Rice Paper Chips, where salmon gets tucked in rice paper with scallions and fried until it shatters.

3. Slice gently so the filling stays put

Use a sharp knife and a gentle sawing motion to cut the roll into 6 pieces, so you don’t squeeze the salmon out the ends. If the roll is really full, cut it into slightly bigger pieces instead of forcing thin ones.

4. Give them room in the air fryer

Lay the pieces out in a single layer with space between them so the hot air can crisp every side. Crowd the basket and they’ll steam instead of crisp, and they can stick together. Work in batches if you need to.

Storage & Leftovers

These are hands-down best fresh, right when that rice paper is at its crispiest. Rice paper softens fast once it cools, so leftovers won’t crunch quite the same way, but they still taste great. Store any extras in an airtight container in the fridge for up to 2 days.

To bring back some crisp, reheat them in the air fryer at 350F for a few minutes rather than the microwave, which just makes the rice paper chewy and tough. I wouldn’t freeze these, since rice paper texture really doesn’t hold up to it.

Can You Make Spicy Salmon Wraps Ahead of Time?

You can prep the filling ahead no problem, but I’d roll and fry them close to serving. Mix the spicy salmon (the chopped salmon, Kewpie mayo, sriracha, and scallion) up to a day in advance and keep it covered in the fridge, so when you’re ready it’s just wrap, slice, and air fry. I wouldn’t roll them up hours ahead, because the rice paper keeps absorbing moisture from the filling and can get sticky and fragile. If you’re serving these at a party, the move is to have the filling ready and the air fryer preheated, then fry a fresh batch right before people dig in so they get that crunch at its peak. They only need 8 to 10 minutes, so it’s easy to time.

Substitutions and Swaps

This recipe is easy to tweak to what you’ve got.

  • Kewpie mayo: Kewpie is my pick for that richer, tangier, umami flavor (it’s made with egg yolks and rice vinegar), but regular mayo works in a pinch. Add a tiny splash of rice vinegar and a pinch of sugar to get closer to that Kewpie taste.
  • The salmon: fresh or thawed-from-frozen salmon both work since it cooks through. Chopped raw shrimp or even canned salmon (well drained) can sub in if that’s what you have, though the texture changes.
  • The sriracha: this is your heat dial. Use 1 tablespoon for mild, 2 for a real kick, or swap in gochujang or your favorite chili sauce. Leave it out entirely and you’ve got a mellow salmon wrap the kids will eat.
  • The nori: it adds that savory, oceany, sushi flavor, so I’d keep it if you can. In a pinch you can skip it, but you’ll lose that umami layer that makes these taste like sushi.

Instructions

  1. Preheat your air fryer to 385F.
  2. Remove the skin from the salmon if it’s still attached, and chop it into small pieces. Chop one of the scallions too.
  3. In a bowl, combine the chopped salmon and scallion with the Kewpie mayo and sriracha until evenly mixed.
  4. Fill a dinner plate partway with water and dunk the sheet of rice paper in so it’s fully coated. Lay it flat on a cutting board, place the sheet of nori on top, and press them together.
  5. Spoon the salmon mixture onto the nori in a straight line about an inch in from one side, then roll it up tightly.
  6. Carefully cut the roll into 6 pieces with a sharp knife, so you don’t squeeze the filling out the ends.
  7. Place the pieces in the air fryer in a single layer and cook for 8 to 10 minutes, or until they start to brown on top.
  8. Top with more Kewpie mayo, a little sriracha, and the second chopped scallion, and enjoy!

These air fryer spicy salmon wraps are proof that you can get that spicy salmon sushi fix at home without any raw fish or takeout prices. Crispy, spicy, creamy, and packed with protein, all from six simple ingredients and about 15 minutes of work.

I love these as a quick lunch, an easy appetizer, or a snack when I want something that feels like a treat but still counts as real food. That crunch when you bite in never gets old.
