When a boring protein bar just won’t cut it, this baked cheesy imitation crab is what I reach for. You shred a couple of crab sticks, pile them up flat, top them with mozzarella, and bake until the ends crisp and the cheese goes golden. That’s it 😋 It’s high in protein, it takes barely any effort, and the spicy Kewpie dip on the side is what takes it over the top. Super tasty, SO easy, and it handles that savory cheesy craving way better than another sad granola bar!

What Makes This Baked Imitation Crab So Good

For me it comes down to two things, crispy edges and gooey cheese. As the shredded crab bakes, the thin ends caramelize and crisp while the mozzarella melts down into it and browns, so you end up with these craggy little bites that taste far more indulgent than five minutes of effort has any right to. Imitation crab is naturally sweet and mild, so it takes on the Italian seasoning easily and plays right off that creamy, spicy dip.

Plus, it’s CRAZY cheap, which is honestly half of why it lives in my snack rotation. If you want to turn the same pack of crab sticks into something even crunchier, my crispy air fryer imitation crab bites wrap them in rice paper and air-fry them until they crackle.

Can You Bake Imitation Crab in the Oven?

You absolutely can, and I’d say it’s one of the best ways to eat it. Baking at 400F for about 20 minutes firms up the surimi and crisps those shredded ends with no deep frying and barely any oil. All you’re doing is shredding, topping with cheese, baking and dipping, so the oven handles the entire thing while you do nothing. If you want more ideas for using up a pack, Platings and Pairings has a big roundup of imitation crab recipes.

Tips for the Best Baked Imitation Crab

1. Shred it well

Pull the crab apart into fine shreds with a fork instead of leaving big chunks. More surface area means more crispy edges, and it lets the cheese work its way through the whole pile. I’d call this the single biggest thing standing between you and a soft, disappointing version of this!

2. Keep the piles thin and even

Spread each pile out flat rather than mounding it up. Thin edges are what actually crisp in the oven, so I go low and even every time instead of building a heap. Give them a little space on the parchment too, so the heat can get around them.

3. Nail the spicy Kewpie dip

The dip is 2 tablespoons of Kewpie stirred with 2 teaspoons of sriracha, and it’s what makes this snack pop. Kewpie is richer and tangier than regular mayo, so you get something creamy and spicy rather than just hot. I go heavier on the sriracha than the recipe says, but dial it wherever you want it. That same creamy-spicy combo shows up in my spicy miso tuna on rice paper chips, and it works on basically any crispy seafood bite. The Kitchen Whisperer builds a whole crab toast around the same idea if you want to go bigger.

4. Spray or butter, your call

A quick spritz of cooking spray helps the edges crisp without adding much fat. If you’d rather use butter, a light brush of melted butter over the piles works and adds a bit of richness. Either way, watch the last few minutes so the cheese browns instead of burning on you!

Storage and Leftovers

I think this one begs to be eaten fresh, while the cheese is still melty and those edges are crisp, so I’d make what you’re going to eat. Leftovers do keep in the fridge for up to 2 days.

Reheat them in the oven or air fryer to bring the crunch back, and I’d stay away from the microwave here, because it turns imitation crab rubbery fast. If you’re craving crab in a bigger way, my crispy rice sushi bake turns it into a creamy topping over a crispy seasoned rice layer.

Equipment

  • Baking pan
  • Parchment paper
  • Mixing bowls

Ingredients

  • 2 sticks imitation crab
  • Cooking spray
  • 4 tablespoons shredded mozzarella
  • 1/4 teaspoon Italian seasoning
  • 2 tablespoons Kewpie mayo
  • 2 teaspoons sriracha

Substitutions and Swaps

  • The imitation crab. Real lump crab works and tastes better, but it’s a lot more expensive and it won’t crisp the same way, since surimi’s firmer texture is what gives you those crunchy edges. For this specific snack I’d stick with the crab sticks.
  • The mozzarella. Any melty cheese does the job, so provolone or Monterey Jack are both great. Sharp cheddar brings more flavor but browns faster, so pull it a few minutes earlier if you go that way.
  • The Kewpie mayo. Regular mayo works, it’s just less rich and less tangy, so I’d add a squeeze of lemon or a splash of rice vinegar to make up the difference. Kewpie’s egg-yolk-only formula is doing real work in that dip.
  • The sriracha. Gochujang gives you a sweeter, deeper heat and it’s SO good in this dip. Chili crisp works too and adds crunch to the dip, which I’m always in favor of.
  • The Italian seasoning. Furikake takes the whole thing Japanese and pairs beautifully with the Kewpie, and Old Bay is the obvious move if you want it to taste like actual crab. All three work, they just point in different directions.

Instructions

  1. Preheat your oven to 400F. Cut the imitation crab sticks in half and shred them with a fork or knife.
  2. Line a baking pan with parchment paper and make 4 flat piles of the shredded crab.
  3. Spray each pile with a little cooking spray, then add 1 tablespoon of shredded mozzarella to each and a pinch of Italian seasoning.
  4. Bake for 20 minutes, until the edges are crisp and the cheese is golden.
  5. While it bakes, mix the Kewpie mayo and sriracha in a small bowl for the dipping sauce.
  6. Pull them out and eat them hot, straight off the parchment.

The sauce is doing more than people expect. Kewpie is richer than regular mayo, and with sriracha stirred through it turns a pile of crab sticks and melted cheese into something you’d actually plan around.

I keep this one in the rotation for late afternoons when dinner is still hours off. Two crab sticks and a handful of mozzarella is not much of a commitment. 🙌

If you make these, leave a star rating on the recipe card and tell me in the comments how hot you took the dip. It really helps other people find the recipe, and I’m always looking for a better snack than a protein bar!
