The idea hit me one day when I was snacking on Lotus Biscoff cookies (as one does) and thought, what if I just… swapped the Rice Krispies for crumbled Biscoff? Turns out, that’s all it takes to make something truly next level.
The whole recipe is basically the same process you already know from making classic marshmallow treats, but instead of cereal, you’re folding in those warm, caramel-y, cinnamon-spiced cookie pieces. Then you drizzle the whole thing with melted dark chocolate because why not. It takes maybe 15 minutes, zero baking required, and the result is this chewy, crunchy, chocolate-drizzled situation that disappears way too fast.

What Makes These Biscoff Marshmallow Treats So Good
If you’ve never had a Biscoff cookie before, first of all, where have you been? They’re those thin, caramelized Belgian cookies you get on airplanes, and they have this warm brown sugar and cinnamon flavor that’s completely unique. When you break them into pieces and fold them into melted marshmallows, the cookies soften just slightly at the edges while keeping their crunch in the center. Tips for Making the Best Biscoff Marshmallow Treats
1. Break the Cookies, Don’t Crush Them
You want pieces, not dust. Break the Biscoff cookies into roughly quarter-sized chunks so you get actual cookie texture in every bite. If you crush them too fine, the mixture will be dense and pasty instead of having that satisfying crunch. I like to just break them by hand into a bowl, no food processor needed.
2. Keep the Heat Low When Melting Marshmallows
Medium-low is the sweet spot. If the heat is too high, the marshmallows will start to brown and get stiff before you even add the cookies. You want them just melted and gooey so they coat everything evenly. Stir continuously once you add them to the butter, and take the pot off the heat before you fold in the cookie pieces.
3. Use Parchment Paper for Easy Removal
Lining your pan with parchment paper is a total game changer. It makes it super easy to lift the whole block out after it sets, and cleanup is basically nonexistent. I also use a small piece of parchment on top and press down with a measuring cup to flatten everything evenly without it sticking to my hands.
4. Let Them Set Before Cutting
I know it’s tempting to dig in immediately, but give them at least 5-10 minutes to firm up. If you try cutting them while they’re still warm, they’ll squish and lose their shape. They don’t need to be rock hard, just set enough to hold together when you slice them.
5. Drizzle the Chocolate After Cutting
Melt your dark chocolate in the microwave in 30-second intervals and stir between each one so it doesn’t seize up. I pour the melted chocolate into a ziploc bag, snip a tiny corner off, and use it like a piping bag. Drizzle over the cut pieces rather than the whole block, so each piece looks clean and evenly decorated.
Storage and Leftovers
These Biscoff marshmallow treats keep really well at room temperature in an airtight container for up to 3 days. I wouldn’t refrigerate them because the marshmallow gets tough and loses that chewy texture.
