Description
These Biscoff marshmallow treats swap Rice Krispies for crumbled Biscoff cookies, held together with gooey melted marshmallows and drizzled with dark chocolate. Easy, no bake, and ready in 15 minutes.
Ingredients
Scale
- 3 tbsp butter
- 10 oz marshmallows (usually 1 bag)
- 6 cups Biscoff cookies (broken into small pieces)
- 5 oz Dark Chocolate Melting Wafers
Equipment
Instructions
- Break the cookies: Break the Biscoff cookies into small pieces in a bowl and set aside.
- Melt the butter and marshmallows: Melt the butter in a large pot over medium-low heat. Pour in the marshmallows and continuously stir until they’re completely melted and smooth.
- Fold in the cookies: Take the pot off the heat, pour in the Biscoff cookie pieces, and mix until they’re evenly coated with the marshmallow mixture.
- Press into pan: Line a small baking pan with parchment paper and transfer the mixture over. Use a small piece of parchment paper and a measuring cup to compress, shape, and flatten it evenly. Let it cool for 5-10 minutes.
- Cut into pieces: Place the block onto a cutting board and use a knife to cut pieces to your desired size.
- Melt the chocolate: Pour the Dark Chocolate Melting Wafers into a microwave-safe bowl. Microwave in 30-second intervals, stirring with a spoon in between, until fully melted.
- Drizzle the chocolate: Spoon the melted chocolate into a ziploc sandwich bag, snip a tiny bit of one of the bottom corners off, and use it like a piping bag to drizzle the chocolate onto each piece.
- Enjoy! Serve immediately or let the chocolate set for a few minutes before serving.
Notes
- Break cookies into small pieces by hand, not in a food processor. You want chunks, not crumbs, so you get texture in every bite.
- Keep the heat at medium-low when melting marshmallows. Too high and they’ll brown and stiffen before you can mix in the cookies.
- Melt chocolate in 30-second intervals and stir between each one to prevent seizing.
- Store in an airtight container at room temperature for up to 3 days. Do not refrigerate or the marshmallow will get tough.
- For a fun variation, try drizzling with white chocolate or adding a sprinkle of flaky sea salt on top before the chocolate sets.
