Equipment
- Waffle maker
- Bread knife
Instructions
- Slice the croissant. Use a bread knife to cut the croissant in half lengthwise.
- Assemble. Spread jam on the bottom half. Add the brie slices, drizzle with honey, and sprinkle the thyme on top. Place the top half back on and drizzle a little more honey on top.
- Press. Preheat the waffle maker, then place the croissant inside and close the lid. Cook for a few minutes until golden brown.
- Serve. Plate it, let it rest for a minute, and enjoy!
Notes
- Leave the brie rind on. It’s edible and helps hold the cheese together as it melts. You won’t notice it once pressed.
- Preheat the waffle maker fully before adding the croissant for even browning and a crispier crust.
- Any fruity jam works here. Strawberry, raspberry, fig, and apricot all pair well with brie.
- Keep the honey light. A small drizzle on each side caramelizes beautifully. Too much and it drips and doesn’t set properly.
