I might never eat mashed potatoes without brie ever again! 😋 These brie mashed potatoes are two ingredients and about fifteen minutes, and they taste like something you’d get charged extra for at a steakhouse. You melt sliced brie over hot, creamy mashed potatoes until it goes gooey and golden, then hit it with chopped chives. That’s the recipe. What Makes Brie Mashed Potatoes So Good

It’s that first spoonful where the melted brie folds down into the potatoes. Brie has this soft, buttery thing going on that plain mash just can’t touch, and once it starts working its way through, every bite tastes like the fancy version of comfort food. The top goes almost fondue-like. SO good!

I keep finding new things to melt brie into and I haven’t missed yet. It’s the same move behind my brie shin ramyun, just pointed at a cozy side dish instead of a spicy instant cup. Melt brie into anything creamy and you’re pretty much guaranteed a win.

Can You Put Brie in Mashed Potatoes?

100%, and it might become your new default. Brie’s buttery flavor was made to melt into starchy potatoes, sort of a shortcut version of pommes aligot, those famously stretchy French cheesy whipped potatoes. Cut it into slices or small chunks so it melts evenly, then either fold it through the hot mash or lay it on top and bake. I leave the rind on most of the time because I like how it helps the slices hold their shape, but trim it off if you want the smoothest possible melt.

What Is the Best Cheese for Mashed Potatoes?

I reach for brie when I want creamy and a little bit fancy for zero extra effort, because it melts into that buttery texture all by itself. Cheddar takes you toward a loaded-baked-potato thing, cream cheese goes tangier and smoother, and Gruyere leans nutty and rich. Brie sits right in that sweet spot of easy and impressive, which is exactly what I want out of a side I threw together in fifteen minutes. Tips for Making Brie Mashed Potatoes

1. Do not sleep on the instant potato cups

I honestly didn’t know instant mashed potatoes were even a thing until I found the Idahoan Mashed Potatoes Cups haha (not a collab, I bought them myself). You add water, microwave for 90 seconds, and they come out ridiculously smooth. Like, I was shocked! If you’d rather use homemade or leftover mash, go ahead, about 2 cups does it.

2. Slice the brie, don’t cube it

Thin slices melt faster and more evenly than fat chunks, so you never get that thing where the top is molten and there’s a cold lump waiting underneath. Half of an 8 oz wheel is right for two servings. Lay the slices flat so they blanket the whole surface!

3. Brie can handle the heat

Don’t be shy about baking it. Ten to fifteen minutes at 350F is your range, and where you land inside it is a real choice: pull it early and it stays creamier, leave it longer and you get those golden bubbly edges while the cheese firms up a bit. I go about 12 minutes and call it perfect. Brie takes to the air fryer just as well, which is how my air fryer fried brie gets its crunchy panko crust.

4. Finish with something fresh

Chopped chives on top cut straight through all that richness, and they make it look like you tried way harder than you did! Parsley or a good crack of black pepper works too. I’d do it right before serving so it stays bright green instead of going sad and wilted.

Storage and Leftovers

Leftovers keep in an airtight container in the fridge for 3 to 4 days. The brie firms up as it chills, but it melts right back the second you reheat it, so I wouldn’t stress about that at all. Warm them in the microwave or a 350F oven with a splash of milk stirred in to bring everything back to creamy.

  • 2 Idahoan Mashed Potatoes Cups
  • 4 oz brie, sliced (about half an 8 oz wheel)
  • 1/2 tsp chives, chopped

Substitutions and Swaps

  • The instant cups. About 2 cups of homemade or leftover mash works just as well, and the boxed flakes are fine too. The one thing I’d hold you to is serving it HOT, because a cold base pulls heat out of the dish and the brie just sits there instead of melting.
  • The brie. Camembert is the closest swap and behaves almost identically, just a little earthier, and I’d grab it without thinking twice. Cream cheese melts smoothly but goes tangy rather than buttery, so that’s a different dish, not a substitute.
  • The rind. Leaving it on is fine and helps the slices keep their shape. Trim it if you want a completely even melt with no chewy bits.
  • The chives. Sliced green onion tops or chopped parsley both do the same job. You want something sharp and green cutting against all that fat, so I wouldn’t skip this one entirely.
  • The oven. For a properly browned top in a hurry, run it under the broiler for 2 to 3 minutes instead, but stand there and watch it, because brie goes from golden to scorched fast.

  2. Give them a quick stir, then transfer to a ramekin or another oven-safe bowl.

  4. Bake for 10 to 15 minutes. Less time keeps it creamier, more time gives you a golden top with slightly firmer cheese.
  5. While it bakes, chop the chives.
  6. Top with the chives and dig in while it’s still molten.

The part I still think about is how good instant potatoes have gotten. I didn’t even know the microwave cups were a thing until I grabbed some myself, and they came out smoother than most mashed potatoes I’ve made the long way. That’s my whole thing anyway, finding the easiest way to get somewhere good.
