Creamy instant mashed potatoes topped with sliced brie and baked until golden and melty. These brie mashed potatoes are the easiest cheesy side you will ever make.

- 2 Idahoan Mashed Potatoes Cups
- 4 oz brie, sliced (about half an 8 oz wheel)
- 1/2 tsp chives, chopped

Instructions
- Preheat and prep. Preheat the oven to 350 F and prepare the Idahoan Mashed Potatoes Cups per the package instructions (add water and microwave about 90 seconds).
- Transfer the potatoes. Stir the potatoes briefly, then spoon them into a ramekin or oven-safe bowl.
- Add the brie. Slice the brie and lay it over the top of the potatoes.
- Bake. Bake for 10 to 15 minutes, less for creamier, more for a golden top.
- Garnish and serve. Top with chopped chives and serve warm.
Notes
- Thin brie slices melt more evenly than big chunks.
- Rind-on holds its shape; trim the rind for a smoother melt.
- Swap in about 2 cups homemade or leftover mashed potatoes if you skip the instant cups.
- Reheat with a splash of milk to bring back the creamy texture.
- Add the chives right before serving so they stay bright.
