Description

Crispy bulgogi rice paper rolls wrap sweet-savory Korean marinated beef, melty mozzarella, scallions, and sesame seeds in egg-dipped rice paper, then air fry until the shell shatters.

  1. Marinate the beef. Combine the bulgogi sauce, beef, and onion in a freezer bag, making sure everything is well coated. Marinate in the fridge for 2 hours.
  2. Cook the beef. Using tongs, transfer the beef and onions to a large frying pan over medium heat, leaving most of the excess sauce behind in the bag. Cook until the juices reduce, then move everything to a plate.
  3. Egg-dip the rice paper. Pour the beaten eggs into a pan wide enough to fit the sheets. Dip both sides of each sheet, then lay them on a cutting board overlapping by about a third.
  4. Fill the rolls. Arrange the cooked beef in a line down the center, then top with the mozzarella, scallions, and sesame seeds.
  5. Roll it up. Fold the sides of the rice paper over the filling like an enchilada, peeling carefully if it sticks, seal the ends, and roll it up snug like a burrito.
  6. Air fry. Place each roll seam-side down in the air fryer, brush or spray with vegetable oil, and cook at 375F for 8 to 10 minutes, flipping halfway, until blistered and golden.

Notes

  • Plan for 2 hours of hands-off marinating before you start cooking.
  • Leave the excess marinade in the bag; a wet filling steams the wrapper and stops it from crisping.
  • Overlap two rice paper sheets for a sturdier roll that will not tear.
  • Do not overfill, or the cheese leaks out as it fries.
  • Let the rolls rest a minute after air frying; they crisp up more as they cool.
  • Reheat leftovers in the air fryer, not the microwave, to bring back the crunch.
