I’ve been on a chocolate kick lately, so I went hunting for inspiration and found chocolate covered brie on a food blog. I was intrigued, so obviously I had to try it. Chocolate covered brie is exactly what it sounds like, little squares of brie with a fresh blueberry pressed into each one, dunked in melted milk chocolate and chilled until the shell snaps. I really wanted to love these. I’m going to keep it a hundred with you though, they didn’t hit the way I thought they would, and I think I know why.

How Do Chocolate Covered Brie Bites Taste?

Not bad, just kind of flat. By no means are these gross, and I ate plenty of them, but every flavor landed in the same soft, mild lane. Brie is buttery and delicate, milk chocolate is sweet and mellow, and the two blurred together instead of playing off each other. Brie isn’t salty enough to balance the chocolate, in my opinion, so you lose that sweet-and-salty tension that makes chocolate-and-cheese work in the first place. Worth knowing before you commit a whole wheel to it.

Does Brie Pair Well With Chocolate?

It can, but it needs help. On paper the pairing is legit and plenty of cheese boards lean on it, and food writers back it up, like this Chowhound piece on brie and chocolate. The thing it lives or dies on is contrast. Mild milk chocolate over mild brie has nowhere to go, so you have to bring something with actual punch: flaky salt on top, a sharper dark chocolate, or fruit with real acidity. That’s the part I missed.

Do You Leave the Rind on the Brie?

For these, leave it on. You’re not baking them (they get chilled, not heated), so the rind is what holds each square together while you’re dipping it and keeps the soft center from oozing out on you. It’s completely edible and pretty mild, so you’ll barely notice it under the chocolate. You can trim it if you want a creamier bite, just know the brie goes floppy and gets harder to coat. Brie is much happier under heat when you actually want it melty, which is how my air fryer fried brie gets a molten center under a crunchy panko shell.

Tips for Making Chocolate Covered Brie

1. Chill the brie before you dip

Cold brie is firm brie, and firm brie doesn’t fall apart on the fork. Cut your squares, press the blueberries in, then park the tray in the fridge while the chocolate melts. Room-temp brie turns into a soft mess the second it hits warm chocolate, and I’d rather you learn that from me than from a whole tray of it!

2. Melt the chocolate low and slow

Microwave it in short bursts, 30 seconds to start, then 20 seconds at a time, stirring between each one until it’s smooth. Milk chocolate scorches fast so don’t blast it. It’s the same melt-and-dip approach I use for my chocolate covered mandarin oranges, just with brie standing in for the fruit.

3. Move fast and use a fork

Drop each square into the chocolate, flip it with a fork to coat it, then lift it straight out. Keep a bit of pace so the brie stays cold and firm. The fork also lets the extra chocolate drip off, which saves you from a thick clumpy puddle on the bottom of every piece.

The Tweak I Would Make Next Time

The blueberries were too shy. They basically vanished under the chocolate and the brie, which is a shame because I added them thinking they’d be the best part. Next round I’m swapping them for a spoonful of berry pie filling or a thick berry jam tucked into each square, so there’s something tart and loud in the middle. A pinch of flaky salt right after dipping is the other thing I’d try. If you just want blueberries and chocolate that land properly, my strawberry blueberry chocolate bark goes all the way in on that combo and doesn’t have the mild-on-mild problem at all. I’m tempted to run this one back!

Storage and Leftovers

Keep them in an airtight container in the fridge for 3 to 4 days. These want to be eaten cold straight out of the fridge so the chocolate stays snappy and the brie stays firm. I wouldn’t leave them sitting out for long, because the brie softens quickly and the chocolate starts going soft right along with it.

  • 1 8 oz wheel of brie
  • 12 blueberries
  • 8 oz milk chocolate, melted

Substitutions and Swaps

  • The blueberries. This is the swap I’d actually make. A spoonful of berry pie filling or a thick, tart jam gives you the acidity the blueberries never delivered, and it’s the version I really want to try next!
  • The milk chocolate. Dark chocolate is the easiest single fix here, since the bitterness pushes back against the brie instead of melting into it. White chocolate is the one I’d avoid, because that’s mild on mild on mild.
  • The brie. A sharper, saltier soft cheese does more work in this recipe than brie does. Camembert gets you a little further, and honestly a salty blue would give you the contrast this is missing, though that’s a pretty different snack at that point.
  • Flaky salt. Not in the original recipe at all, but a pinch on top of each one right after dipping is the cheapest way to fix the flatness I ran into.
  • The wheel size. An 8 oz wheel gives you 12 squares. Scale it however you want, just keep the chocolate at roughly 1 oz per square so you have enough depth to dunk properly.

Instructions

  1. Trim the rounded edges off the brie to make a square, then slice it into 12 equal pieces.
  2. Press a small divot into each piece with your finger and set a blueberry inside. Set them aside.
  3. Add the milk chocolate to a microwave-safe bowl and microwave for 30 seconds. Stir, then keep going in 20-second bursts, stirring between each, until it’s fully melted and smooth.
  4. Line a small baking pan with parchment paper. Drop each brie square into the chocolate one at a time and use a fork to flip and coat it completely.
  5. Lift each piece out with the fork, let the extra chocolate drip off, and set it on the parchment.
  6. Chill in the fridge for about 15 minutes, or until the chocolate hardens. Eat them cold.

I’ll be straight with you, this one didn’t land the way I wanted it to. It isn’t bad at all, the flavors just sat flatter than I expected, and I think brie isn’t salty enough to push back against the chocolate the way you’d want.
