A churro rice krispie treat coated in cinnamon sugar

I LOVE churros, but if you’ve been following me for any amount of time you already know I’m going to look for the easier way to get 90% of the way there. These churro rice krispie treats are exactly that 🤯 You melt butter and marshmallows, stir cinnamon straight into the crispy rice, press it into a pan, and dust more cinnamon over the top. About 10 minutes, one pot, no frying and no candy thermometer anywhere near it. This is probably the easiest rice krispies treats variation I’ve made and it might be my favorite, which tells you complex doesn’t always mean better!

What Makes These Churro Rice Krispie Treats So Good

It’s a texture thing first. You get that buttery, chewy marshmallow pull with the light snap of crisp rice, and then the cinnamon arrives right behind it. Mixing the cinnamon into the cereal instead of only dusting the top means every single bite you take tastes like the inside of a churro rather than just the first layer. SO good!

Plus, this sits right alongside the ube Oreo and pandan white chocolate versions in my rice krispies treats roundup, and I’d argue it’s the easiest of the bunch. Even America’s Test Kitchen has a churro-style version, so clearly I’m not the only one who thinks cinnamon belongs in here.

What Makes These Taste Like a Churro?

Two hits of cinnamon instead of one. You stir a full 1.5 teaspoons into the cereal so the warmth runs through the whole batch, then dust the pressed top with the rest right after. Churros are really just fried dough rolled in cinnamon sugar, so here the marshmallows handle the sweetness and the cinnamon does the rest of the job. If you want that actual fried, crispy churro crunch, my cinnamon toast sticks get there by deep-frying bread crusts and tossing them straight into cinnamon sugar. For a no-fry version though, I think these give you the flavor without any of the mess!

Tips for Making Churro Rice Krispie Treats

1. Melt the marshmallows low and slow

Keep the heat low and pull the pot off the burner the second they’ve melted. Blasting them on high or letting them sit too long is exactly why rice krispie treats come out hard and dense instead of soft and chewy. Is it worth babysitting a pot for four minutes? For me, every time.

2. Use fresh marshmallows

Stale ones seize up and never melt smooth, and that’s the other reason treats turn out stiff on you. If the bag’s been open in your pantry since last summer, grab a new one. It makes a bigger difference than you’d think!

3. Press gently, not hard

Use a piece of parchment to spread and flatten the mixture, and then resist the urge to really pack it down. The harder you compress it, the more brick-like the treats get. A light, even press is what keeps them pillowy, and you’ll feel the difference immediately!

4. Dust the cinnamon while it cools

Use a small fine mesh sieve so the cinnamon lands evenly instead of in clumps, and do it while the surface is still slightly warm so it grabs. Then let it cool properly before you cut, or you’ll drag the whole slab out of shape.

Storage and Leftovers

Keep them in an airtight container at room temperature for up to 3 days. I wouldn’t refrigerate them, because cold turns marshmallow treats hard and you lose the exact chew you made them for.

If you want to riff further, my fruity pebbles rice krispies treats go the complete opposite direction with marshmallow creme stirred in for extra gooeyness. Same base, totally different energy, and you can knock either one out in ten minutes!

A spoonful of cinnamon being added to a glass bowl of crisp rice cereal

Equipment

  • Large pot
  • Mixing bowls
  • Rectangular baking pan
  • Parchment paper
  • Fine mesh sieve

Ingredients

  • 3 tablespoons unsalted butter
  • 10 oz marshmallows (usually 1 bag)
  • 1 1/2 teaspoons cinnamon, for mixing
  • 1 teaspoon cinnamon, for dusting
  • 6 cups Rice Krispies

Substitutions and Swaps

  • The cinnamon. This is the whole identity of the recipe, so it’s the one thing I wouldn’t touch. If you want to push it further, a pinch of nutmeg or cardamom alongside it is really nice, but cinnamon has to lead.
  • The marshmallows. Mini marshmallows melt faster and more evenly than the big ones, so grab those if you have a choice. Marshmallow creme stirred in at the end (about 1/2 cup) makes them gooier, which is what I do in the fruity pebbles version.
  • The Rice Krispies. Any crisp rice cereal works, including the store brand. Cinnamon Toast Crunch is a fun swap that doubles down on the churro thing, though it’s sweeter, so I’d pull the cinnamon in the mix back a little.
  • The butter. Salted butter is completely fine here and honestly a bit better, since the salt cuts all that sugar. Browning the butter first is the upgrade I’d point you to if you’ve got five extra minutes.
  • Adding a dip. A chocolate sauce on the side turns these into a proper churro situation. It’s not in the recipe, but it’s the first thing I’d add if I were serving these to people.

Instructions

  1. Melt the butter over low heat in a large pot.
  2. While it melts, dump the Rice Krispies into a large mixing bowl with the 1 1/2 teaspoons of cinnamon and toss them together.
  3. Once the butter has melted, pour in the bag of marshmallows and melt them down, stirring occasionally.
  4. As soon as the marshmallows are completely melted, take the pot off the heat.
  5. Pour in the cinnamon-coated Rice Krispies and mix them through the marshmallows until evenly coated.
  6. Transfer to a small or medium rectangular baking pan lined with parchment paper. Use a smaller piece of parchment to spread it out and flatten the top.
  7. Let it cool, dusting the top with the remaining cinnamon through a fine mesh sieve as it does. Chop on a cutting board and serve.

This is probably the easiest Rice Krispies variation I’ve made and still one of my favorites, which tracks. Complex doesn’t always mean better, and cinnamon sugar on a crispy marshmallow square proves that pretty fast.

They’re a good move for a bake sale or a party tray, since you can make a full pan and cut them however big you want. 🙌

If you make these, leave a star rating on the recipe card and tell me in the comments how they came out. It really helps other people find the recipe, and I want to know if anyone went the chocolate dip route!

Instructions

  1. Melt the butter over low heat in a large pot.
  2. Season the cereal by dumping the rice krispies into a large mixing bowl with the 1 1/2 tsp of cinnamon and tossing to coat evenly.
  3. Add the marshmallows to the melted butter and melt them down, stirring occasionally.
  4. Pull it off the heat as soon as the marshmallows are completely melted.
  5. Fold in the cereal and stir until everything is evenly coated.
  6. Press into a pan lined with parchment, using a smaller piece of parchment to gently spread and flatten the top.
  7. Cool and dust with the remaining 1 tsp of cinnamon through a fine mesh sieve, then chop into squares and serve.

Notes

  • Keep the heat low and pull the pot off the burner the moment the marshmallows melt so the treats stay soft.
  • Use fresh marshmallows. Stale ones never melt smooth and lead to hard treats.
  • Press gently. Packing the mixture down too hard makes the treats dense.
  • For a stronger cinnamon sugar top, mix a little granulated sugar into the dusting cinnamon.
  • Store airtight at room temperature for up to 3 days, with parchment between stacked layers.
