3. Toss in cinnamon sugar while warm
Coat the sticks while they’re still hot so the cinnamon sugar actually sticks. I use a 3-to-1 sugar-to-cinnamon ratio, but if you love a strong cinnamon hit, bump it up. Do it in a bowl and toss so every side gets covered.

Do you need cinnamon sticks or ground cinnamon?
Use ground cinnamon, not cinnamon sticks. The name “cinnamon toast sticks” refers to the STICK shape of the fried bread, not the spice, so you want regular ground cinnamon mixed into the sugar. Cinnamon sticks (the whole bark quills) are for steeping into drinks and syrups and won’t coat the sticks at all.

Are cinnamon toast sticks the same as French toast sticks?
No, and it is worth knowing the difference before you make them. French toast sticks are dipped in an egg-and-milk custard and pan-fried, so they’re soft and eggy inside. These cinnamon toast sticks skip the custard entirely and just fry the bread crust, so they come out crunchy like a fried bread-crust treat.
