What Is the Difference Between Jiffy and Krusteaz Cornbread Mix in Cookies?
Jiffy is sweeter and more cake-like with a finer crumb, while Krusteaz Southern style is richer and a touch more savory with a buttermilk note, so it makes a more grown-up cookie. Both work in this recipe. If you use Jiffy, your cookies will be a little sweeter and softer, so you may want to pull back slightly on the added sugar.
Do Cornbread Cookies Need to Be Refrigerated?
Unfrosted cornbread cookies are fine at room temperature in an airtight container for about 3 days. Once you add the honey buttercream, they keep best in the fridge, where the frosting stays firm and the cookies stay fresh for up to 5 days. Bring them back to room temperature before serving so the buttercream softens.

Tips for Making Cornbread Cookies
1. Cream the butter until fluffy
Beat the room-temp butter with both sugars using a hand mixer until pale and fluffy, about 2 minutes. This builds the structure that keeps the cookies soft and gives them lift, so don’t rush it.
2. Chill the dough
Pop the bowl in the freezer for 20 minutes before scooping. Cold dough spreads less and bakes into thicker, softer cookies instead of thin, greasy ones. It also makes the sticky dough much easier to roll.
3. Do not overbake
Pull them at about 14 minutes, when just the edges are golden brown and the centers still look a touch underdone. They firm up as they cool, and that is how you keep the soft, tender middle.

- Frost. Spread buttercream on each cooled cookie and drizzle a little honey on top just before serving.
