Description

A Korean street toast with a cabbage and egg omelette, crispy Spam, ketchup, and a sprinkle of sugar, all toasted on buttered white bread for the perfect sweet-savory bite.


Ingredients

  • 3 oz cabbage, shredded
  • 1 tbsp carrots, shredded
  • 2 tbsp onion, chopped
  • 1/2 tsp gochugaru (Korean red chili flakes)
  • pepper, to taste
  • 1 Egg
  • 1 tbsp Unsalted Butter
  • 2 slices spam, about 1 cm thick
  • ketchup, to taste
  • 1/2 tsp granulated sugar
  • 2 slices white bread

  1. Mix the filling. Shred the cabbage and carrot and chop the onion. Combine in a bowl with the gochugaru, pepper, and egg, and mix well with a fork.
  2. Crisp the Spam. Slice two roughly 1 cm pieces of Spam and cook in a small pan over medium heat until the edges crisp. Set aside.
  3. Cook the omelette. Butter the pan over medium heat. Pour in the egg mixture in a circle about the size of your bread. Cook until the edges set, about a minute, then flip and cook 30 seconds more.
  4. Add the bread. Lay one slice of bread on the egg, then flip so the bread is down and the egg faces up.
  5. Season and layer. Squeeze ketchup over the egg, sprinkle the sugar evenly, and add the Spam. Move quickly so the bread toasts without burning, or use the pan’s residual heat.
  6. Finish. Top with the second slice of bread, flip to toast that side, then serve hot.

Notes

  • Shred the cabbage and carrot finely so the omelette holds together when you flip it.
  • Keep the omelette about the size of your bread slice so every bite has filling.
  • Start with a small pinch of sugar; the ketchup and carrots already add sweetness.
  • Lower the heat or use residual pan warmth at the toasting stage so the bread crisps instead of burning.
  • Leave the Spam out for the classic veggie-and-egg version, or swap in ham or bacon.
