Description

Gochujang deviled egg musubi are a fusion party snack. Creamy gochujang-spiced yolks piped into egg whites, topped with glazed Spam, furikake, scallion, and a strip of nori. All the musubi flavor with no rice.

Ingredients

Scale
  • 3 large eggs
  • 2 tbsp Kewpie mayo
  • 1 to 2 tsp gochujang
  • 1/4 tsp garlic powder
  • Salt and black pepper, to taste
  • 3 slices Spam
  • 1 to 2 tbsp teriyaki sauce
  • 1 sheet nori, cut into thin strips
  • 1/2 stalk scallion, chopped
  • furikake, for topping
  • Equipment
  • saucepan
  • mixing bowl
  • small skillet
  • piping bag or zip-top bag (optional)

Instructions

  1. Boil the eggs. Hard boil the eggs for 10 to 11 minutes, then transfer to an ice bath. Once cool, peel and halve each egg and scoop the yolks into a bowl.
  2. Make the filling. Mash the yolks with the Kewpie mayo, gochujang, garlic powder, salt, and pepper until smooth and creamy.
  3. Cut the meat. Lay an egg half flat-side-down on a slice of Spam and trace around it with a knife to cut an egg-shaped piece. Repeat until you have 6 pieces.
  4. Glaze. Pan-fry the Spam pieces until they darken on each side, then add the teriyaki sauce and cook until it reduces into a glaze.
  5. Fill. Spoon or pipe the yolk mixture back into the egg whites and top each with a glazed Spam piece.
  6. Finish. Wrap a thin strip of nori around the center, sprinkle furikake on top, and finish with chopped scallion. Serve right away.

Notes

  • Boil 10 to 11 minutes then ice-bath the eggs for no gray ring and easy peeling.
  • Press the yolk mix through a fine mesh sieve for an extra silky, pipeable filling.
  • Let the teriyaki reduce into a sticky glaze on the Spam. Do not rush it.
  • Assemble right before serving so the nori stays crisp.
  • Adjust gochujang to taste. Start at 1 tsp if you are spice-shy.
