Warm, cheesy, and loaded with rotisserie chicken, this hot chicken dip is the move when I want a party snack that comes together fast and vanishes even faster. What sets it apart is the secret ingredient, Tari Aji Amarillo Hot Sauce, made from a Peruvian pepper that brings this bright, slightly fruity heat you just don’t get from your usual bottle of hot sauce. I teamed up with Tari on this one, and that aji amarillo is what takes a regular cheesy chicken dip somewhere way more interesting. You bake it until it’s bubbly and golden, scoop it up with tortilla chips, and good luck sharing it! 🔥

What Makes This Hot Chicken Dip So Good

I build it on a rich, creamy base of cream cheese and sour cream, and from there it just keeps stacking flavor. The aji amarillo hot sauce brings that fruity heat, a little honey rounds it out so it’s warm instead of harsh, and the rotisserie chicken makes it hearty enough to be the whole snack. Then you’ve got gooey melted mozzarella, fresh pico de gallo, and a sprinkle of queso fresco on top.

You get this scoopable, cheesy, slightly spicy dip that hits every note at once, creamy, savory, fresh, and a little sweet. It’s SO good you might just eat the whole dish yourself. I won’t judge!

What Is Aji Amarillo, and What Does It Taste Like?

Aji amarillo is a bright yellow-orange chili pepper from the Andes, and it’s one of the cornerstones of Peruvian cooking. Flavor-wise, it’s special because it leads with fruit before the heat shows up. You get this almost tropical, slightly raisiny sweetness alongside a medium, very manageable kick, which is exactly why it works so well in a creamy dip. If you want to go deeper, Chili Pepper Madness has a great breakdown of its heat level and origin, and PepperScale gets into the flavor and how it’s used. In this dip, I love that the fruitiness keeps things interesting instead of just hot.

Can You Use Rotisserie Chicken in This Dip?

Absolutely, and it’s the shortcut that makes this so easy. A store-bought rotisserie chicken is already cooked and seasoned, so you just shred what you need and fold it right in, no cooking or cleanup required! Rotisserie chicken is the shortcut that makes this so easy, and it’s the same move behind my viral Costco rotisserie chicken rice hack, which turns one bird and the juices in the bag into a five-minute meal. For this dip, about a cup and a half of shredded meat is the sweet spot.

Tips for Making Hot Chicken Dip

1. Bring the dairy to room temp

I always let my cream cheese and sour cream sit out before I start. Room-temp dairy beats together into a smooth, lump-free base, while cold cream cheese fights you the whole way and leaves little chunks behind.

2. Don’t skip the honey

Two tablespoons of honey might feel random in a savory dip, but it’s what rounds off the aji amarillo so the heat reads as warm and fruity instead of sharp. It’s a tiny move, but I promise you it makes a big difference!

3. Save some toppings for after baking

Stir half the pico, cilantro, and green onion into the dip, then hold the rest for after it comes out of the oven. That way you get baked-in flavor plus a fresh, colorful finish on top that hasn’t gone soft.

4. Dial the heat to your crowd

Aji amarillo is on the milder side, but if you’re feeding spice-shy folks, start with a little less hot sauce and add more to taste. If you want it hotter, a drizzle more on top right before serving does the trick.

What to Serve With Hot Chicken Dip

Sturdy tortilla chips are my go-to since this dip is thick and begs to be scooped, but it’s just as good with pita chips, crackers, or crunchy veggies like celery and bell pepper strips. It’s built for a game-day spread, so I like setting it out next to a few other crowd-pleasers. A bowl of my easy jalapeño ranch dip makes a great cooler, creamier counterpart, and between the two you’ve got the whole snack table covered!

How Do You Keep Hot Chicken Dip Warm for a Party?

The easiest way is to bake it in an oven-safe dish, then move it straight to a small slow cooker set on warm or low so it stays melty for hours. If you don’t have one, just pop the dish back in a low oven, around 200F, between rounds. A cheesy dip like this firms up as it cools, so keeping it warm is what keeps it scoopable and gooey. Give it a quick stir if it sits a while and it comes right back to life!

Storage & Leftovers

If you somehow have leftovers, store them in an airtight container in the fridge for up to 3 days. They keep really well, and I love scooping this cold straight from the fridge the next day.

To reheat, warm it in the microwave in short bursts, stirring between each, or back in the oven at 350F until it’s hot and bubbly again. Add a fresh sprinkle of cilantro and a little extra hot sauce to wake it back up before serving.

Equipment

Ingredients

  • 12 ounces cream cheese (room temp)
  • 2/3 cup sour cream (room temp)
  • 1/2 cup Tari Aji Amarillo Hot Sauce
  • 2 tbsp honey
  • 2 green onion stalks
  • 1 tsp garlic powder
  • 1/2 tsp ground paprika
  • 1/4 tsp salt
  • 4 tbsp cilantro (chopped)
  • 1/2 cup pico de gallo
  • 1 1/2 cups rotisserie chicken (shredded)
  • 1 1/4 cups mozzarella (shredded)
  • 2 tbsp queso fresco
  • Tortilla chips (for serving)

Substitutions and Swaps

This dip is forgiving, but there are a couple of ingredients you’ll want to protect.

  • The aji amarillo hot sauce. This is the ingredient that makes the dip what it is, so I wouldn’t swap it for a generic hot sauce and expect the same thing. If you can’t get Tari’s, another aji amarillo sauce or a spoonful of aji amarillo paste thinned with a little water will keep that fruity Peruvian flavor. A regular red hot sauce works, it just makes a totally different, spicier dip.
  • Rotisserie chicken. Any cooked, shredded chicken works here, so leftover baked or poached chicken is a fine stand-in. Rotisserie is just the laziest, most flavorful option.
  • Mozzarella. Monterey Jack or a melty Mexican cheese blend swaps in perfectly if you want a little more tang or a better melt.
  • Sour cream. Full-fat Greek yogurt works and adds a nice tang, though it makes the dip slightly less rich.
  • Queso fresco. Cotija or even a little crumbled feta gives you that same salty, crumbly finish on top.

Instructions

  1. Preheat your oven to 425F. Shred your rotisserie chicken and set it aside. Chop the green onions and cilantro and set those aside too.
  2. In a large bowl, beat the cream cheese and sour cream together with a hand mixer until smooth.
  3. Mix in the aji amarillo hot sauce, honey, garlic powder, paprika, salt, half the green onions, half the cilantro, and half the pico de gallo.
  4. Fold in the shredded chicken and 1 cup of the mozzarella with a spatula. Spread it into an oven-safe dish and sprinkle the remaining mozzarella on top. Bake for 20 minutes.
  5. Top with the remaining pico de gallo, cilantro, queso fresco, and an extra drizzle of aji amarillo hot sauce.
  6. Serve hot with tortilla chips and dig in.

This is one of those recipes that punches way above the effort you put in. It’s basically stir, top, bake, and you end up with a warm, cheesy, slightly spicy dip that people crowd around. That’s a solid trade in my book.

It’s made for game day, potlucks, and lazy weekend hangs, and it slides right into a spread next to my crispy baked chicken wings for a full-on chicken lover’s spread! Big thanks to Tari for teaming up on this one.

  3. Season it. Mix in the aji amarillo hot sauce, honey, garlic powder, paprika, salt, half the green onions, half the cilantro, and half the pico de gallo.
