I used Zab’s, which leans on datil and cayenne peppers for a rounded warmth, but any good hot honey works. In a pinch you can fake it by gently warming honey with a pinch of red pepper flakes. Tips for the Best Hot Honey Mozzarella Sticks

1. Freeze the sticks solid before cooking

This is the single most important step. Give the breaded sticks at least 2 hours in the freezer so the cheese is rock hard before it hits the heat. Skip it and the mozzarella melts and leaks before the crust can set.

2. Double coat for a leakproof crust

Go flour, egg, panko, then back into the egg and panko again. That second layer seals the edges and corners, which are exactly where cheese likes to escape. As The Kitchn notes, a well-frozen, well-coated stick is the whole game with air-fried mozzarella.

3. Preheat the air fryer

Get it up to 390F before the sticks go in. A hot start crisps the panko fast, so the crust is golden by the time the cheese is just melty inside.

Straight out of the air fryer, tumble the sticks in the hot honey so it clings and turns glossy. Wait too long and it just slides off the cooled crust.

5. Do not crowd the basket

These are best fresh and hot, when the cheese is at its stretchiest. Leftovers keep in an airtight container in the fridge for up to 3 days; reheat them in the air fryer at 350F for 3 to 4 minutes to bring back the crunch. Avoid the microwave, which turns the crust rubbery. You can also freeze the breaded, uncooked sticks and air-fry straight from frozen, adding a couple of extra minutes. How to Make Hot Honey Mozzarella Sticks

  1. Set out 3 bowls. In the first, mix the panko, onion powder, garlic powder, and paprika. Whisk the eggs in the second. Add the flour to the third.
  2. Cut the mozzarella block lengthwise into two long, thin pieces, then cut those in half to make 4 sticks.
  3. Coat one stick in flour, then egg, then panko, then back into the egg and back into the panko again. Press to seal, especially the edges and corners. Repeat with all the sticks.
  4. Freeze the coated sticks for at least 2 hours, until solid.
  5. Preheat the air fryer to 390F. Air-fry the sticks for about 6 minutes, until golden brown.
  6. Toss the hot sticks in hot honey right away and serve immediately.
