A Korean BBQ crunchwrap is a Taco Bell-style crunchwrap stuffed with KBBQ flavors: bulgogi-marinated ribeye, furikake rice, kimchi, cucumber, and melty mozzarella, all folded into a large tortilla with a crunchy tostada inside and pan-seared until crispy. It’s the mashup of Korean BBQ night and fast food you didn’t know you needed.

Some of my favorite meals happen when two cravings collide. I wanted Korean BBQ and I also wanted something crispy and handheld I could eat on the couch, and this is what came out of that Friday-night indecision. One bite of bulgogi, rice, and gooey cheese wrapped in a crunchy tortilla, and I was completely sold.

If you already love the fold-and-sear format from my steakhouse burger crunchwrap, this is the Korean BBQ version of that handheld idea. That same energy carries into dessert with the Crispy S’mores Crunchwrap, which folds jumbo marshmallows, a chocolate bar, and graham cracker into a flour tortilla, pan-fries it until golden, and rolls the whole thing in cinnamon sugar.

What Makes This Korean BBQ Crunchwrap So Good

It is all about texture and contrast in one handheld package. You get juicy, sweet-savory bulgogi beef, warm furikake rice, tangy kimchi, cool cucumber, and stretchy mozzarella, and then the whole thing goes crispy where the tortilla hits the pan. The tostada casera tucked in the middle adds an extra crunch so it never goes soggy.

The bulgogi marinade does most of the flavor work, the same way it carries my homemade bulgogi. Give the beef an overnight soak and the payoff is huge.

What Is a Crunchwrap?

A crunchwrap is a hexagon-folded wrap where a large flour tortilla is folded up and over a stack of fillings, sealing everything inside with a crisp tostada layer in the center. You pan-sear it seam-side down so it holds its shape and gets golden and crunchy. Taco Bell made the format famous, and it works with just about any filling you love.

What Do You Put in a Korean BBQ Wrap?

For this Korean crunchwrap, the layers are bulgogi ribeye, instant white rice dusted with furikake, mozzarella, cucumber, and kimchi. The mozzarella goes on both the top and bottom of the stack so the melted cheese helps hold everything together. You can add scallions, a swipe of gochujang mayo, or shredded lettuce if you want. Bulgogi is the most popular Korean BBQ dish, thin slices of beef marinated in a sweet-savory blend of soy, sugar, garlic, and pear, then quickly grilled or seared. It’s the perfect filling here because it cooks fast and stays juicy. For the classic version, Maangchi has a great traditional bulgogi recipe. Tips for Making a Korean BBQ Crunchwrap

1. Marinate the beef overnight

Give the ribeye a full overnight soak in the bulgogi sauce if you can. The longer marinade tenderizes the beef and packs in flavor. Even 30 minutes helps if you’re in a rush.

2. Slice the ribeye thin

Pop the ribeye in the freezer for 20 minutes before slicing, then cut thin strips against the grain. Thin beef cooks quickly and folds neatly into the wrap without making it bulky.

3. Cheese on the outside layers

Put a layer of mozzarella against both tortilla surfaces. As it melts, the cheese acts like glue and keeps the crunchwrap from popping open while it sears.

4. Sear seam-side down first

Set the folded crunchwrap seam-side down in the hot pan and leave it alone for 3 to 4 minutes. That first sear locks the fold shut, so it holds together when you flip it. This is the same trick I use for a folded kimbap.

Storage and Leftovers

These are best fresh and crispy, but leftovers keep in an airtight container in the fridge for up to 2 days. Reheat in a dry pan over medium or in the air fryer to bring the crunch back; the microwave will make the tortilla soft. You can also prep the bulgogi filling a day ahead and assemble right before searing. Serve it with more kimchi on the side or a plate of my gilgeori toast for a full Korean street-food night.

  • 4 large (10 inch) flour tortillas
  • 2 tostadas caseras
  • 1 lb boneless ribeye, thinly sliced
  • 1/2 onion, chopped
  • 2 cups bulgogi sauce
  • 2 cups shredded mozzarella
  • 1 cup instant white rice, cooked
  • furikake, to taste
  • 1/2 cucumber, cut into thin strips
  • 1/2 cup kimchi
  • vegetable oil, for the pan

Instructions

  1. Combine the sliced ribeye, chopped onion, and bulgogi sauce in a mixing bowl. Toss to coat, cover, and refrigerate overnight.
  2. Heat a little vegetable oil in a frying pan over medium heat and cook the beef and onions until the meat is cooked through. Microwave the instant white rice per the package, then set both aside.
  3. Lay a tostada casera on a large tortilla and trace around it with a knife to cut a mini tortilla. Repeat so you have two mini tortillas and two full-size ones.
  4. On each full tortilla, add a circle of mozzarella about the size of the tostada, then layer on rice, furikake, beef, and onions. Top with the tostada casera, then cucumber, kimchi, and more mozzarella.
  5. Set a mini tortilla on top and fold the edges of the large tortilla up and over toward the center until the crunchwrap is completely sealed.
  6. Cook seam-side down in an oiled pan over medium heat for 3 to 4 minutes until sealed and golden, then flip and cook 3 more minutes. Serve hot.
