I’ll always have a soft spot for Kraft mac and cheese, because I basically lived off Easy Mac and instant ramen through college haha. So this one’s personal. These mac and cheese stuffed onion rings take a box of the Original Mac & Cheese Dinner, load it up with bacon and chives, pack it inside a fresh onion ring, and bury it all in a crispy panko crust. It’s like deep fried mac and cheese, except even better (have I said “even better” enough times yet?), and there’s no vat of oil anywhere in sight 😋

What Makes These Mac and Cheese Stuffed Onion Rings So Good
You’re stacking three of the best comfort foods into one bite. Sweet onion, creamy mac, and a panko crust that cracks when you bite it. The onion goes tender in the air fryer while the crumb turns deep golden, and then you get that molten mac in the middle. It’s ridiculous, in the best way!
Plus, the mac itself isn’t just mac. Crumbled bacon and chopped chives stirred into a box of Kraft is the easiest way I know to make boxed mac taste like you actually tried. I bought pre-crumbled bacon because I wasn’t about to fry bacon for this, but you can absolutely make it yourself. If you like turning mac and cheese into something else entirely, my pumpkin mac and cheese melts a whole can of pumpkin and a pinch of cinnamon into the sauce for a cozy fall version. This one goes the complete opposite direction: crispy, handheld, built for dunking.
Why Do You Freeze the Onion Rings Before Breading?
This is the step that makes or breaks the recipe, so don’t skip it. Once you’ve spooned the mac into the rings, they go in the freezer for at least an hour until the filling’s solid. Cold, firm mac holds its shape while you’re breading it and while it’s cooking, so it doesn’t come oozing out the second it hits the heat. And an hour in the freezer costs you nothing but patience! It’s the same freeze-first move I use on my hot honey mozzarella sticks, where freezing the breaded sticks is what stops the cheese leaking before the crust sets.

Tips for Making Mac and Cheese Stuffed Onion Rings
1. Double bread them
Flour, then egg, then panko, then back into the egg and panko a second time. That double layer’s what seals the mac in, and it gives you a thicker, crunchier shell. Pack the mac in tight and smooth the edges too, because any gap is somewhere for cheese to escape.
2. Season the panko
Don’t use it plain. Mix in garlic powder, black pepper and a little extra crumbled bacon so the crust tastes like something on its own. It’s a tiny move and it’s the difference between a good crust and a crust you’d eat by itself!
3. Spray the oil, don’t skip it
Give them a proper spray before cooking and again after you flip. An air fryer crisps with circulating heat, and that light coat of oil is what turns the panko deep golden instead of dusty and pale. This is the most common thing people skip and it’s why their air fryer breading comes out sad.
4. Work in batches
Give them room in the basket so the air can actually move around them. If you crowd them they steam instead of crisping, and you’ve done all that breading for nothing. Ten minutes at 350F, flip and spray, then 6 more minutes.
Storage and Leftovers
They’re best straight out of the air fryer when the crust’s at peak crunch, but leftovers keep in the fridge for up to 3 days. Reheat them at 350F in the air fryer for 4 to 5 minutes and they come right back! The microwave will just make them soft, so I wouldn’t bother.
You can also freeze them breaded but uncooked and air fry them straight from frozen, just give it a few extra minutes. Serve with ranch, or go marinara or spicy mayo. If you’re putting together a whole air fryer snack spread, my crispy imitation crab bites wrap crab sticks in rice paper for another crunchy no-deep-fryer bite.

Equipment
- Air fryer
- Mixing bowls
- Baking pan
- Parchment paper
Ingredients
- 1 package Kraft Original Mac & Cheese Dinner
- 3 tablespoons crumbled bacon, plus 2 tablespoons for the panko
- 3 tablespoons chives, chopped
- 1 large yellow onion
- 1 cup flour
- 4 eggs
- 2 cups panko
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- Vegetable oil spray
Substitutions and Swaps
- The boxed mac. Any boxed mac works, and leftover homemade mac is even better because it’s thicker and holds together more easily. What won’t work is anything loose or saucy, since it’ll run straight out of the ring the moment it warms up.
- The onion. A big firm yellow onion is what you want, and use the wide outer rings for stuffing. Sweet onions like Vidalia are great here too! Red onion works but it’s sharper and stays a bit more assertive against all that cheese.
- The bacon. Diced ham, crumbled sausage or even crushed BBQ chips in the panko all do the job. Going meatless is fine too, I’d just add a bit more garlic powder so the crust doesn’t fall flat.
- The panko. Regular breadcrumbs will work but they won’t crack the same way, and that crunch is most of the appeal here. If there’s one thing on this list I’d tell you to keep as-is, it’s the panko.
- The air fryer. You can bake these at 400F for around 20 minutes, turning halfway, though you won’t get quite the same crust. Deep frying obviously works, but then you’ve undone the whole reason I made them this way!

Instructions
- Make the mac and cheese per the package instructions. Chop the chives, then stir them and 3 tablespoons of crumbled bacon into the mac in a medium bowl.
- Cut the ends off the onion and slice it into thirds, then gently push the layers apart to separate the rings. Line a baking pan with parchment and lay the rings on it.
- Spoon the mac and cheese generously into each ring, packing it in and smoothing the edges. Freeze for at least 1 hour, until the filling’s completely solid.
- Set out 3 bowls: flour in the first, beaten eggs in the second, and panko mixed with the garlic powder, black pepper and remaining 2 tablespoons of bacon in the third.
- Coat each ring in flour, then egg, then panko. Dunk it back into the egg and panko a second time, then place it in the air fryer basket.
- Spray them with vegetable oil and cook at 350F for 10 minutes. Flip, spray again, and cook another 6 minutes until golden and crunchy.
- Serve them hot with ranch for dipping.

The best way I can describe these is deep fried mac and cheese, except the onion gives you something to actually bite through. That crumb shell is what makes it work, and the bacon and chives keep it from turning into cheese on cheese.
Make them for game day, or whenever people are standing around your kitchen anyway. Nobody guesses there’s a blue box involved. 🙌
If you make these, leave a star rating on the recipe card and tell me in the comments how they came out. It really helps other people find the recipe, and I want to know what you dunked them in!
