Chocolate covered strawberries are always a win, but these Malibu chocolate covered strawberries are the grown-up version and they’re made for summer ☀️ You poke fresh strawberries full of little holes, soak them in coconut rum overnight, then dip them in dark chocolate so every bite is juicy, boozy and wrapped in a glossy shell. Shoutout to @timthetankofficial for the inspo! If you’ve never had Malibu, it’s a coconut rum with about half the alcohol of a regular shot, so it goes down easy and I think it’s perfect against the berries. Adults only on this one, and it’s CRAZY easy.

What Makes These Malibu Chocolate Covered Strawberries So Good
It’s the fresh, juicy strawberry, the coconut rum soaked all the way into it, and then the snap of dark chocolate over the top. What I like most is that the Malibu doesn’t scream alcohol at you. It’s coconutty and sweet, so it plays off the berry instead of fighting it, and the chocolate shell makes the whole plate look luxurious even though you basically did nothing. SO good!
Plus, there’s no cooking anywhere in here. You soak, you dip, you chill. If you want a more decked-out route, my Dubai chocolate covered strawberries use the same melted dark chocolate dip but add a pistachio cream and toasted kataifi layer underneath. This Malibu version stays stripped down on purpose.
If you love that same zero-cook, chocolate-dipped approach with fruit, my Chocolate Covered Frozen Banana Sticks are just 2 ingredients and go straight from the freezer to your hand.
Should You Soak Strawberries Before Dipping in Chocolate?
For a boozy version like this, absolutely, and it’s the entire point. Poking holes and letting them sit in Malibu overnight is how the coconut rum gets deep into the fruit instead of just sitting on the skin.
There’s a catch though, and I’d underline it. You have to pat them completely dry before dipping. Chocolate and water are enemies, so any Malibu left on the surface will make the shell slide right off or seize up on you. Take them out, blot them properly, then dip. The pros will tell you the berries need to be bone dry for a clean shell, and they’re right.

What Alcohol Pairs with Chocolate Covered Strawberries?
Coconut rum is my pick because it’s light, sweet and tropical, which is exactly the summer thing I was going for. But strawberries and chocolate are pretty easygoing, so you’ve got room. Champagne or prosecco lean classic and celebratory, vodka soaks in almost flavor-neutral if you want a stronger hit, and something like Kahlua or Baileys takes it dessert-y and creamy. Here’s a solid pairing rundown if you want to go deeper on it.
For another coconut-forward party dessert, my Easy King’s Hawaiian Pineapple Coconut Buns bring that same sweet tropical energy in pull-apart form, perfect for sharing at a cookout.
And if soaking things in booze is your kind of project, you’ll probably love my boozy gummy bears. Same idea, different snack. You submerge gummy bears in the liquor of your choice, Malibu included, and let them plump up in the fridge.
Tips for Making Malibu Chocolate Covered Strawberries
1. Poke lots of holes
Take a toothpick and really go to town on each berry. The more little channels you make, the more Malibu gets in there overnight. A couple of polite stabs isn’t going to cut it if you want the flavor all the way through!
2. Soak overnight, not for an hour
These need real time to drink it in, and I’d give them the full night in the fridge. Rush it and you get a barely-boozy strawberry, which kind of defeats the purpose of the whole exercise.
3. Dry them, then dry them again
I know I already said it, and I’m saying it again because it’s the number one thing people get wrong. Wet berries wreck chocolate. Blot every single one until the surface feels dry to the touch before it goes anywhere near the bowl.
4. Work with cold berries
If they’re still cool from the fridge when you dip, the chocolate sets almost instantly, like a minute or two. If they’ve come back up to room temperature, just put the dipped ones in the fridge for about 10 minutes to firm up!
Storage and Leftovers
Keep them in the fridge in a single layer and eat them within 2 days. Strawberries release moisture as they sit, so the shell can start weeping and sliding after that, and they’re never quite as good on day three.
I wouldn’t freeze these. The berry goes mushy on the thaw and the chocolate cracks off, which loses you both of the things you made them for.

Equipment
- Airtight container
- Microwave-safe bowl
- Parchment paper
- Toothpicks
Ingredients
- Malibu coconut liqueur, enough to submerge the berries
- 5 oz Ghirardelli dark chocolate melting wafers
- 6 strawberries
Substitutions and Swaps
- The Malibu. Any coconut rum works, and if you want the same tropical thing without alcohol, a coconut syrup soak gets you the flavor but obviously none of the kick. It also won’t soak in as deeply, since the sugar content is much higher.
- The dark chocolate. White chocolate is honestly the move if you want to lean into the coconut, and milk chocolate works fine too. Melting wafers set firmer and glossier than chips do, so grab those if you have the choice.
- The strawberries. Pineapple chunks and cherries both soak beautifully and dip the same way. I’d avoid anything really soft like raspberries, because they fall apart the moment you start poking holes in them.
- Making them stronger. Vodka soaks in nearly flavor-neutral and hits harder, so use that if the Malibu is too mild for you. Just know you lose the coconut, which is the best part of this version to me.
- Going alcohol-free. Soak the berries in coconut milk with a little sugar instead. You get a creamy coconut note and it’s completely kid-friendly, so you can make one batch of each.
Instructions
- Wash the strawberries and use a toothpick to poke plenty of holes in each one.
- Put them in a container or bowl and fill with Malibu until they’re completely submerged. Cover and soak in the fridge overnight.
- Take the container out, remove the strawberries, and pat them completely dry with a paper towel. Set them aside.
- Put the chocolate melting wafers in a microwave-safe bowl and microwave for 30 seconds. Stir, then microwave another 20 seconds and stir again until it’s fully melted.
- Lay out a sheet of parchment paper. Dip each strawberry in the chocolate and set it on the parchment.
- If they’re still cool from the fridge, the chocolate should harden within a minute or two. If they’ve warmed up, put them back in the fridge for about 10 minutes.

One thing worth knowing if you’ve never had Malibu: it’s a coconut rum sitting at about half the alcohol of a normal shot, so these read boozy without knocking anybody sideways. That’s a good chunk of why they work for a crowd.
Make them for a pool day or a summer cookout. They look like a lot more effort than an overnight soak and a chocolate dip, which is exactly the point. 🙌
If you make these, leave a star rating on the recipe card and tell me in the comments how boozy yours came out. It really helps other people find the recipe, and I want to know what you soaked them in!
