I love a good matcha dessert, and this is the EASIEST way to make a delicious matcha crepe cake! It’s a delicious stack of matcha-flavored crepes with a light whipped cream in between each layer. You can also top it with a dusting of matcha powder if you want, or just eat it as-is.
Not only is it delicious, but it’s a relatively light dessert with a more subtle sweetness, so it’s not going to be overwhelming if you’re already full from dinner. It also looks amazing with all those layers and the alternating colors!

INGREDIENTS (makes ~16 crepe layers)
EQUIPMENT:
Handheld Crepe Maker
BATTER:
2 cups whole milk
3 tbsp granulated sugar
3 eggs
1 cup cake flour
2 tbsp matcha powder
1.5 tbsp unsalted butter
1/2 tsp baking powder
HOMEMADE WHIPPED CREAM:
1.5 cups heavy cream
4 tbsp granulated sugar
INSTRUCTIONS:
1️⃣ Pour milk into a small sauce pan over low heat and mix in the sugar. Once the milk is warm, remove from heat.
2️⃣ In a large mixing bowl, whisk three eggs. Then gradually pour the warm milk in while whisking.
3️⃣ Add the cake flour, matcha, and baking powder to a fine mesh sieve, sift half the mixture into the mixing bowl, and whisk. Then sift the rest of the mixture into the bowl and whisk again.
4️⃣ Pour the finished batter through another fine mesh sieve into a separate bowl to get rid of any clumps. Put plastic wrap over the bowl, and chill in the fridge for 1 hour.
5️⃣ After an hour, pour the batter into the plastic bowl that comes with the crepe maker. Turn on the device, and let it heat for 5 minutes.
6️⃣ Dip the hot side of the device into the batter and slowly lift it out. Flip it so the hot side is facing up and set it on the table for 10-20 seconds or until the batter cooks. Then, peel the crepe off the crepe maker. It’s a nonstick surface, so it should fall right off.
7️⃣ In a small mixing bowl, pour in the heavy cream and sugar, and use a hand mixer until you get firm peaks.
8️⃣ Using an offset spatula, spread the whipped cream onto the first crepe. If you have a revolving cake stand, it makes this part easier. You want this layer to be super thin! I’m talking 2-3mm.
9️⃣ Keep repeating this process of adding a crepe on top and then adding a thin layer of whipped cream until you’ve used all your crepes.
🔟 Evenly sift the matcha onto the cake. Then put it in the fridge for 2 hours so it all sets correctly. This is important!!

Ingredients
- For the batter
- 2 cups whole milk

Instructions

- Start the batter. In a large bowl, whisk 3 eggs, then gradually pour in the warm milk while whisking.
- Sift in the dry. Sift the cake flour, matcha, and baking powder through a fine mesh sieve into the bowl in two additions, whisking after each.
- Strain and chill. Pour the batter through a fine mesh sieve into a clean bowl to remove clumps, cover with plastic wrap, and chill 1 hour.
- Heat the crepe maker. Pour the chilled batter into the crepe maker’s bowl, turn it on, and let it heat for 5 minutes.
- Cook the crepes. Dip the hot plate into the batter, lift it out, flip it batter-side up, and rest 10 to 20 seconds until set, then peel the crepe off the nonstick surface.
- Whip the cream. In a bowl, beat the heavy cream and sugar with a hand mixer to firm peaks.
- Layer. Spread a very thin layer of whipped cream (about 2 to 3mm) onto the first crepe with an offset spatula. A revolving cake stand helps.
- Build. Keep stacking crepes with a thin layer of cream between each until all the crepes are used.
- Finish. Sift matcha evenly over the top and chill 2 hours so it sets. This step matters.

- Keep each cream layer thin so the cake holds its shape and does not slide.
- Straining the batter twice is the secret to smooth, clump-free matcha crepes.
