Description
No-bake matcha strawberry rice krispies treats: gooey marshmallow and earthy matcha topped with tangy freeze-dried strawberries. Ready in about 15 minutes.

- 3 tbsp unsalted butter
- 10 oz marshmallows (about 1 bag)
- 2 tbsp matcha powder
- 6 cups Rice Krispies
- 1/4 cup freeze-dried strawberries

- Prep the pan. Line a medium baking pan with parchment paper and set it aside.
- Melt the butter. Melt the butter in a large pot over medium-low heat, then add the marshmallows.
- Add the matcha. Stir constantly until the marshmallows are fully melted, then whisk in the matcha powder until the mixture is an even green with no streaks.
- Fold in the cereal. Take the pot off the heat, pour in the Rice Krispies, and stir until every piece is coated.
- Press it in. Transfer the mixture to the pan and press it into an even layer with a silicone spatula, just enough to hold together.
- Top with strawberries. Crush the freeze-dried strawberries and sprinkle them over the top.
- Cut and serve. Let it set a few minutes, then cut into squares and enjoy.
Notes
- Use culinary grade matcha, not ceremonial. It is cheaper and holds its color and flavor in the treats.
- Melt the marshmallows over medium-low heat and stir constantly so the base stays glossy, not stiff.
- Whisk the matcha in while the base is hot, before the cereal goes in, to avoid dry clumps.
- Always use freeze-dried strawberries, not fresh. Fresh berries add water and make the treats soggy.
- Press the mixture in gently. Packing it too hard makes the treats dense and hard instead of chewy.
