The setup is simple: mix LA VICTORIA SALSA BRAVA Hot Sauce into instant rice, press it into a hot pan until the bottom crisps up, pour in beaten eggs with cheddar, and cover until set. Then flip it onto a plate and load it up with LA VICTORIA Thick ‘N Chunky Salsa, queso fresco, jalapeños, and cilantro. Why This Crispy Rice Omelette Recipe Works
The crispy rice base is the whole thing. It’s the same concept as my Spicy Salmon on Crispy Rice bites: press rice into a hot oiled pan, leave it alone, and you get a golden, crunchy crust that holds the dish together. For this omelette, the SALSA BRAVA Hot Sauce gets mixed into the rice before pressing, so the flavor is baked right into the crispy layer from the bottom up.
The egg layer is even simpler: beaten eggs whisked with shredded cheddar poured right over the crispy rice, then covered until fully set. No technique required. You’re essentially building a one-pan meal in two layers, and then you slide it onto a plate and let the toppings do the rest. Tips for Making a Crispy Rice Omelette
1. Use day-old rice or dry the instant rice first
Fresh hot rice has too much moisture to crisp up properly. If you’re using an instant rice cup, spread it on Parchment Paper and let it dry out for about an hour before cooking. Day-old refrigerated rice already has the right texture and skips this wait entirely.
2. How to make a fried rice omelette that stays together
Press the rice into a thin, even layer across the entire pan before the eggs go in. The thinner and more compact the layer, the better it crisps and the more stable the base when you flip. If the rice is too thick in spots, you’ll get soft patches in the middle.
3. Cover while the eggs cook
Once you pour in the egg mixture, put a lid on the pan and cook 3 to 5 minutes. Don’t lift it to check early. If the egg layer is still loose when you flip, the whole thing falls apart. Fully set eggs are what let the omelette slide cleanly onto the plate.
4. The salsa finishing move
LA VICTORIA Thick ‘N Chunky Salsa is the right call here. A thin salsa just runs off the eggs and pools on the plate, but a chunky one sits right on top of the omelette. Generous. Add the queso fresco and fresh cilantro last so everything looks good on the table.

Storage & Leftovers
This is best right out of the pan. The crispy rice layer softens as it sits. If you have leftovers, store in the fridge in a covered container for up to 2 days and reheat in a pan over medium heat to bring back some of the texture. A microwave reheats it but won’t get the bottom crispy again.

- 1 Instant Rice Cup (7.1 oz)
- 2 tbsp LA VICTORIA SALSA BRAVA Hot Sauce

- 1 jalapeño (sliced)
- 2 tbsp fresh cilantro
- 1/4 cup LA VICTORIA Thick ‘N Chunky Medium Red Salsa

Instructions
- Microwave the Instant Rice Cup per package directions. Spread in a thin layer on Parchment Paper and let sit about 1 hour to dry out. Skip this step if using day-old refrigerated rice.
- Slice the jalapeño and crumble the queso fresco. Heat Vegetable Oil in a pan over medium heat. Add the rice and stir to coat. Add LA VICTORIA SALSA BRAVA Hot Sauce and mix to combine. Press the rice into a thin, even layer across the pan.
- Whisk the Eggs with the shredded cheddar. Pour the egg mixture over the rice and spread evenly with a Thin Spatula.
- Scatter the sliced jalapeños and about half the cilantro over the top.
- Cover and cook 3 to 5 minutes until the eggs are fully set.
- Loosen the edges with the spatula, then tilt the pan and slide the omelette onto a plate.
- Top with LA VICTORIA Thick ‘N Chunky Salsa, crumbled queso fresco, and remaining cilantro. Slice into triangles and serve.
Mixing the hot sauce into the rice instead of spooning salsa over the top is what makes this work. The flavor ends up inside the crispy layer rather than sitting on it, so you get heat in every bite instead of just the first two.
Cut it into wedges and put it in the middle of the table. It holds its shape well enough that people can pick pieces straight up. 🙌
