Scale
- 1 tbsp Vegetable Oil
- 1 Instant Rice Cup (7.1 oz)
- 2 tbsp LA VICTORIA SALSA BRAVA Hot Sauce
- 3-4 Eggs
- 1/4 cup shredded cheddar
- 1 jalapeño, sliced
- 2 tbsp fresh cilantro
- 1/4 cup LA VICTORIA Thick 'N Chunky Medium Red Salsa
- 1/4 cup queso fresco, crumbled
Equipment
- Frying Pan with lid
- Thin Spatula
- Parchment Paper
- Whisk
Instructions
- Dry the rice. Microwave Instant Rice Cup per package directions. Spread on Parchment Paper and let dry about 1 hour. Skip if using day-old rice.
- Crisp the rice. Heat Vegetable Oil in a pan over medium heat. Add rice, stir to coat. Add LA VICTORIA SALSA BRAVA Hot Sauce, mix, then press into a thin even layer.
- Add eggs. Whisk Eggs with shredded cheddar. Pour over the rice and spread evenly.
- Add toppings. Scatter jalapeño slices and half the cilantro over the egg layer.
- Cook covered. Cover and cook 3 to 5 minutes until eggs are fully set.
- Flip and plate. Loosen edges with Thin Spatula, tilt the pan, and slide the omelette onto a plate.
- Finish. Top with LA VICTORIA Thick ‘N Chunky Salsa, crumbled queso fresco, and remaining cilantro. Slice into triangles and serve.
Notes
- Drying the rice first is key: wet rice steams instead of crisping. One hour on Parchment Paper, or use day-old refrigerated rice.
- Press the rice into a thin, even layer so the entire bottom crisps uniformly.
- Don’t flip until the eggs are fully set: a jiggly egg layer means the omelette will fall apart.
- Thick and chunky salsa works best as a topping: thin salsa runs off the eggs and pools on the plate.
- Best served immediately: the crispy rice softens quickly as it sits.
