Cook it straight from frozen and the middle stays gummy while the outside browns. Let the scallion pancake dough thaw so it cooks through evenly, and don’t skip that part.
2. Stack for thickness
One round can come out thin and cracker-like. Stack two rounds for the first waffle, then press the leftover scraps into a second one, and you’ve got a sturdier waffle that’ll hold all those toppings.
3. Grease the iron
Scallion pancake dough already has oil in it, but a quick spray of the waffle maker keeps the layers from sticking and tearing when you lift the lid. It’s a two-second step that saves the whole waffle.
4. Load right before serving
These are best the second they come off the iron, crispy and hot, so don’t let them sit. Add the toppings just before eating so the waffle doesn’t go soft under the salsa.

Storage and Leftovers
This one’s really a make-and-eat dish, best hot off the waffle maker while the edges are crisp. If you’ve got plain, unloaded waffles left over, store them in an airtight container in the fridge for up to 2 days and re-crisp them in the waffle maker, a toaster, or an air fryer. Don’t store them loaded, the toppings’ll turn the waffle soggy.

- While the first waffle cooks, press the leftover dough scraps into a circle for the second waffle. Slice the avocado, chop the cilantro, and crumble the queso fresco. Heat a lightly oiled frying pan over medium heat, fry both eggs, and set aside.
- Remove the first waffle and set it aside. Put the second dough round in the waffle maker and cook another 5 to 7 minutes until crispy and golden brown.
- Top each waffle with 1 tbsp cheddar and half the avocado slices, then drizzle on 1 tbsp of the SALSA BRAVA Hot Sauce. Set a fried egg on top, then finish with 1 tbsp of the Thick ‘N Chunky Medium Red Salsa, 1 tsp cilantro, and 1 tsp queso fresco.
- Serve right away while the waffles are hot and crispy.
What I like about this one is that it works in two completely different settings without changing a thing. Put it out at a backyard cookout and it makes sense. Put it on the table for a lazy weekend brunch and it makes just as much sense.
