Description

Loaded scallion pancake waffles: frozen scallion pancake dough crisped in a waffle maker, then piled Mexican-style with avocado, a fried egg, cheddar, and salsa.

Ingredients

Scale
  • 2 frozen scallion pancake doughs
  • 1 avocado, sliced
  • 2 Eggs
  • 2 tbsp shredded cheddar
  • 2 tbsp LA VICTORIA SALSA BRAVA Hot Sauce
  • 2 tbsp LA VICTORIA Thick 'N Chunky Medium Red Salsa
  • 2 tsp cilantro, chopped
  • 2 tsp queso fresco, crumbled

Equipment

Instructions

  1. Cook the first waffle. Thaw the scallion pancake doughs, stack one on the other for thickness, cut a circle to fit your mini waffle maker, then press and cook 5 to 7 minutes until crispy and golden brown.
  2. Prep the toppings. While it cooks, press the leftover scraps into a second round. Slice the avocado, chop the cilantro, crumble the queso fresco, and fry both eggs in a lightly oiled frying pan.
  3. Cook the second waffle. Remove the first waffle, add the second dough round to the maker, and cook another 5 to 7 minutes until crispy.
  4. Load them up. Top each waffle with 1 tbsp cheddar and half the avocado, drizzle on 1 tbsp SALSA BRAVA Hot Sauce, set a fried egg on top, then finish with 1 tbsp Thick ‘N Chunky Medium Red Salsa, 1 tsp cilantro, and 1 tsp queso fresco.
  5. Serve. Eat right away while the waffles are hot and crispy.

Notes

  • Thaw the dough before cooking so the middle cooks through instead of staying gummy.
  • Stack two rounds for a sturdier waffle that holds the toppings; press the scraps into a second waffle.
  • Give the waffle iron a quick spray so the layers don’t stick and tear.
  • Load the toppings right before serving so the waffle stays crisp.
  • Store only plain, unloaded waffles (up to 2 days) and re-crisp in the waffle maker, toaster, or air fryer.
