Mint desserts are one of those things people either love or side-eye, and I’m fully in the love camp. These mint mochi brownies take that cool peppermint hit and fold it into a fudgy chocolate brownie built on sweet rice flour instead of regular flour, so every square bakes up dense, fudgy, and chewy. Mine came out more fudgy than the bouncy mochi chew you might be picturing, and with a white chocolate drizzle and crushed candy cane on top, they land right in holiday-treat territory. What Makes These Mint Mochi Brownies So Good
The magic is the sweet rice flour. It’s the same flour behind chewy Japanese mochi, so instead of the cakey crumb you get from all-purpose, these brownies bake up dense, fudgy, and a little chewy at the edges. The peppermint plays off the dark chocolate, and the crushed candy cane on top adds a little crunch to every bite.

What Makes Mochi Brownies Different From Regular Brownies?
The difference is all in the flour. Mochi brownies swap regular flour for sweet rice flour (sometimes labeled mochiko or glutinous rice flour), which has no gluten and a high starch content, so the finished brownie is chewier and more fudgy than a standard one. You get that signature mochi pull, kind of like the gooey center in my Chewy Mochi-Stuffed Chocolate Chip Cookies, except here it runs through the whole pan instead of hiding in the middle. Tips for Making Mint Mochi Brownies
1. Go easy on the peppermint extract
Peppermint extract is strong, so 1 teaspoon is plenty for an 8×8 pan. Mint can tip from festive to toothpaste real quick, so measure it, don’t eyeball it. If you’re mint-shy, start with 3/4 teaspoon and taste the batter first.
2. Use sweet rice flour, not regular rice flour
This is the one swap you can’t fake. Sweet rice flour (mochiko) is what gives these their chew, while regular rice flour or all-purpose will hand you a totally different, non-chewy brownie. Grab a bag of sweet white rice flour and you’re set for a whole run of mochi recipes.
3. Bang the pan halfway through
When the first 20 minutes are up, pull the pan and drop it on a folded towel or trivet a few times to knock out the big air pockets, then bake the last 10 minutes. That’s what keeps the middle dense and fudgy instead of puffy and cakey.
4. Melt your chocolate low and slow
Microwave the butter and dark chocolate in short 20-second bursts, stirring between each one. Chocolate scorches fast, and once it seizes there’s no bringing it back, so a little patience here pays off big.

Storage and Leftovers
Store the brownies in an airtight container at room temp for up to 3 days, or in the fridge for about a week. The mochi chew actually holds up better than a regular brownie, so they don’t dry out as fast. For that just-baked softness, microwave a square for 8 to 10 seconds before eating. Instructions

- In a large bowl, use a hand mixer to beat the eggs, granulated sugar, brown sugar, vanilla extract, peppermint extract, and salt until thick and creamy. Pour in the melted chocolate and mix until combined.
- Sift in the sweet rice flour and cocoa powder, then fold with a silicone spatula until you have a smooth batter.
- Spread the batter into the pan and bake for 20 minutes. Pull it out and bang it on a trivet or folded towel to release the air pockets, then bake 10 more minutes. Let it cool for 20 minutes.
- Melt the white chocolate and drizzle it over the top. Crush the candy cane (press a chef knife flat on top, like smashing garlic) and sprinkle it on.
- Let the brownies rest about 40 minutes until fully cool, then slice and enjoy.
One thing worth setting straight: these land more fudgy than chewy. If you’re expecting the full mochi pull you get from butter mochi, that isn’t quite what’s happening here, and I think that’s the right call for a brownie.
They’re a holiday season thing for me, mostly because crushed candy cane over the top is hard to argue with in December. 🙌
