If you love matcha but have zero patience for baking an actual cake, these no-bake matcha cake pops were made for you. The whole shortcut is using Eggo waffles instead of a homemade cake base: throw them in a food processor with butter, honey, powdered sugar, and matcha powder, roll the dough into balls, dip in white chocolate, and you’re done. No oven, no cooling time, and the matcha flavor is legit front and center. Fair warning, I made these and they were gone SO fast.

What Makes These Matcha Cake Pops Work
Eggo waffles blend into a dough-like consistency in a food processor fast. It holds together like a real cake pop base, and the matcha takes center stage. The result is a proper matcha cake pop with real matcha flavor, not just green food coloring.
The white chocolate coating is the other piece. White chocolate’s sweetness plays perfectly against matcha’s bitterness, which is also why my Matcha Muddy Buddies use the same combination: Chex cereal coated in matcha white chocolate. Tips for Making No-Bake Matcha Cake Pops
1. Thaw the Eggo waffles first
A 40-second microwave zap is all you need. Warm waffles blend smoother and faster than cold, straight-from-the-freezer ones. Once they’re soft, a food processor turns them into fine crumbs in seconds.
2. Blend until the dough holds
After you add the butter, honey, powdered sugar, matcha, and salt, blend until the mixture clumps into a dough rather than a loose crumb. Press it with your finger: if it holds together, you’re ready to roll.
3. Melt white chocolate slowly
White chocolate burns faster than dark or milk. Start with 30 seconds in the microwave, stir, then 20 more seconds, stir again. If it’s not fully melted after two rounds, keep stirring off the heat: the residual warmth usually finishes the job. White chocolate that overheats turns grainy and thick, and there’s no saving it.
4. Let them set before drizzling
Give the dipped cake pops a full 10 minutes in the fridge after their initial coating. If you try to drizzle the matcha chocolate on top before the base coat sets, it just blends into a murky mess. Patience pays here.
5. Make it your own
I’m already thinking about a chocolate version with mini chocolate chips next time. You could also swap matcha for cocoa powder, pandan extract, or strawberry powder and keep the exact same technique. The Eggo waffle base works with basically ANYTHING. Can I Make Matcha Cake Pops Ahead of Time?
Yes, and they hold up really well. You can make these up to 2 days before a party and store them in a covered container in the refrigerator. The white chocolate shell keeps the interior fresh and prevents drying out. Just add the matcha drizzle decoration the day you plan to serve so it looks its best.

Storage & Leftovers
Store in an airtight container in the refrigerator for up to 5 days. The white chocolate coating protects the inside and the flavor stays consistent. You can also freeze the undipped balls for up to one month: thaw overnight in the fridge, then dip and drizzle fresh.

Instructions
- Microwave the Eggo Waffles for about 40 seconds to thaw. Rip into smaller pieces and place in a food processor. Blend until finely chopped.
- Add the Unsalted Butter, powdered sugar, honey, 2 tbsp Matcha Powder, and salt. Blend until a dough forms.
- Press the dough together, break into 5-6 equal chunks, and roll each one into a ball.
- Place the White Chocolate Melting Wafers in a microwave safe bowl. Microwave 30 seconds, stir, then microwave 20 seconds more. Stir until fully melted.
- Roll each ball in the melted white chocolate until coated. Insert a lollipop stick halfway into each ball, lift, and stand in a styrofoam block. Refrigerate 10 minutes to set.
- If the remaining white chocolate is still liquid, stir in 1 tsp Matcha Powder. If it hardened, microwave 15 seconds first. Transfer to a Ziploc sandwich bag, snip a tiny corner off, and drizzle over each cake pop.
- Enjoy immediately or keep refrigerated until ready to serve.
The part worth stealing here isn’t the matcha, it’s the waffle base. Once you know a food processor and a few waffles can stand in for a baked cake, you can make basically any cake pop flavor you want without turning the oven on.
