Both of these are best eaten fresh off the griddle, but if you have leftovers, you can store them in an airtight container in the fridge for up to 3 days. Reheat in the microwave for 20-30 seconds or pop them in a toaster oven to crisp them back up.

The bacon pancakes reheat really well in a toaster oven since it helps the bacon stay crispy. The banana bites are good cold too, kind of like a little dessert bite.

Bacon Pancakes

Ingredients:

  • 1 cup Krusteaz pancake mix (or any pancake mix)
  • 2/3 cup cold water
  • 3 pieces of bacon
  • Maple syrup to taste

Substitutions: You can use turkey bacon if you prefer. For a thicker pancake, use a little less water.

Caramelized Banana Pancake Bites

Ingredients:

  • 1 cup Krusteaz pancake mix (or any pancake mix)
  • 2/3 cup cold water
  • 2 bananas
  • 2 tbsp unsalted butter
  • 2 tbsp brown sugar
  • Cinnamon to taste
  • Powdered sugar to taste

Substitutions: Salted butter works if that’s what you have, just skip any additional salt. You can use coconut sugar instead of brown sugar for a slightly different flavor.

Bacon Pancakes

  1. Cook the bacon in a pan over medium heat until crispy. I like mine really crispy for these. Set them aside on a paper towel to drain off the excess grease.
  2. Pour the pancake mix and water into a medium mixing bowl and whisk until smooth. Don’t overmix or your pancakes will be tough.
  3. Place one piece of bacon in the pan on medium heat and pour enough pancake batter over it to cover the bacon completely. You want just enough batter to encase the bacon.
  4. Cook until you see small bubbles forming on the surface (about 1-2 minutes), then flip and cook until golden brown on the other side. The pancake should be cooked through and the bacon nice and warm.
  5. Repeat for the remaining pieces of bacon. Serve hot with maple syrup drizzled on top.

Caramelized Banana Pancake Bites

  1. Slice your bananas into pieces about 1cm wide (roughly half an inch). Try to keep them uniform so they cook evenly.
  2. Melt the butter in a large pan over medium heat. Add the sliced bananas in a single layer, making sure none of them overlap. Sprinkle the brown sugar and cinnamon over the top.
  3. Cook for about 3 minutes without moving them. You want them to caramelize on the bottom. Flip each piece and cook for another 3 minutes until they’re golden and caramelized on both sides.
  4. Transfer the caramelized banana slices to a plate lined with parchment paper and pop them in the fridge for 10-15 minutes. They need to cool and firm up a bit so they don’t fall apart when you dip them.
  5. Pour the pancake mix and water into a medium mixing bowl and whisk until smooth.
  6. Working one at a time, use a fork to dip each caramelized banana slice into the pancake batter, making sure it’s fully coated. Place it on a frying pan over medium heat.
  7. Cook for just 20-30 seconds, then carefully flip to the other side. Cook until golden brown (another 30-60 seconds). Transfer to a plate.
