Instructions

For Bacon Pancakes:

  1. Cook the bacon: Cook bacon in a skillet until crispy. Transfer to a paper towel-lined plate to drain excess grease.
  2. Mix the batter: In a medium mixing bowl, whisk together pancake mix and cold water until smooth with no lumps.
  3. Make bacon pancakes: Place one piece of bacon in a pan over medium heat. Pour pancake batter over the bacon, using just enough to cover it completely. Cook until small bubbles form on the surface, about 2-3 minutes.
  4. Flip and finish: Flip the pancake and cook until golden brown on the other side, about 2 minutes more. Repeat with remaining bacon pieces.
  5. Serve: Serve warm with maple syrup.

For Caramelized Banana Pancake Bites:

  1. Prep the bananas: Slice bananas into rounds about 1cm (roughly 1/2 inch) thick.
  2. Caramelize the bananas: Melt butter in a large pan over medium heat. Add banana slices in a single layer without overlapping. Sprinkle with brown sugar and cinnamon. Cook for 3 minutes without moving.
  3. Flip and finish caramelizing: Flip each banana slice and cook for another 3 minutes until deeply caramelized and golden.
  4. Cool the bananas: Transfer caramelized banana slices to a parchment-lined plate and refrigerate for 10-15 minutes to firm up.
  5. Mix the batter: While bananas cool, whisk together pancake mix and cold water in a medium bowl until smooth.
  6. Coat and cook: Using a fork, dip each chilled banana slice into the pancake batter, coating completely. Place on a preheated pan over medium heat. Cook for 20-30 seconds per side until golden brown.
  7. Serve: Transfer to a serving plate and dust lightly with powdered sugar before serving.

Notes

  • Cook bacon until crispy before adding pancake batter – softer bacon can become soggy and won’t hold its texture as well.
  • Don’t skip chilling the caramelized bananas. They’re extremely soft and hot right after caramelizing and will fall apart if you try to dip them immediately.
  • Keep your pan at medium heat for both recipes. Too high burns the outside before cooking through; too low prevents proper browning.
  • Use light hands with the powdered sugar on the banana bites – they’re already sweet from the caramelization, and you want to taste those bananas.
  • Any pancake mix works for these hacks, but Krusteaz Buttermilk is convenient since it only requires water (no eggs or milk needed).
  • Store leftover bacon pancakes in the fridge for up to 3 days. Reheat in a toaster or skillet. Banana bites are best enjoyed fresh.
