Ingredients
Scale
- 3 tablespoons Unsalted Butter
- 10 oz marshmallows (usually 1 bag)
- 2 tablespoons + 1/2 teaspoon pandan powder (divided)
- 6 cups Rice Krispies cereal
- 15 oz White Chocolate Melting Wafers
Equipment
Instructions
- Melt the butter: In a large pot over medium-low heat, melt the butter, then pour in the marshmallows.
- Stir and add pandan: Continuously stir to mix in the butter and evenly melt the marshmallows. Once they’re completely melted and smooth, add 2 tablespoons of pandan powder and mix together until the mixture is a uniform green color all throughout with no streaks.
- Mix in cereal: Remove the pot from the heat, pour in the Rice Krispies cereal, and mix until all the cereal is evenly coated with the green marshmallow mixture.
- Press into pan: Line a small baking pan (8×8 or 9×9 works great) with parchment paper and transfer the Rice Krispies mixture into it. Use a small piece of parchment paper and the bottom of a measuring cup to compress and shape the mixture into an even layer. Let it cool for 5-10 minutes until firm.
- Cut into pieces: Transfer the Rice Krispies block onto a cutting board and use a sharp knife to cut into pieces of your desired size (about 12-16 squares).
- Melt the chocolate: Pour the white chocolate wafers into a microwave-safe bowl. Microwave for 30 second intervals, stirring with a spoon in between each interval, until completely melted and smooth.
- Dip in chocolate: Dip each Rice Krispies Treat into the melted white chocolate about halfway up, letting the excess chocolate drip off before placing it back on a parchment paper-lined surface. Repeat for each piece.
- Dust with pandan (optional): Dust the white chocolate with the remaining 1/2 teaspoon of pandan powder if desired for extra visual appeal and pandan flavor.
- Let chocolate set: Let the treats sit at room temperature until the chocolate hardens, about 15-20 minutes, or enjoy them while the chocolate is still melty!
Notes
- Use 100% pure pandan powder for the most authentic flavor and vibrant natural green color. You can find it at Asian grocery stores or online.
- If using pandan extract instead of powder, use 2 teaspoons and note that the color may not be as bright.
- Make sure marshmallows are completely melted and smooth before adding pandan powder to avoid streaky, uneven coloring.
- White chocolate melting wafers work better than chocolate chips because they melt smoother and harden better at room temperature without tempering.
- Store in an airtight container at room temperature for up to 3 days, or freeze individually wrapped for up to 2 months.
- Let treats cool completely (5-10 minutes) before cutting for cleaner squares that hold together better.
