Five ingredients, fifteen minutes, one pan, zero frying. That’s the whole deal here, and I could not love it more. Rice paper ham and cheese rolls take egg-dipped rice paper, wrap it around pepper jack and honey ham, then bake the whole thing in a bed of shredded mozzarella. The egg keeps the rice paper soft and chewy while the cheese crisps into lacy golden edges. So easy it almost feels like cheating.

The last time I brushed egg onto rice paper was back during the rice paper croissant craze a couple of years ago, and this takes that exact same trick somewhere savory. Chewy rice paper, spicy pepper jack, salty ham, and gooey mozzarella both inside AND on top? Come on now. That is a snack.

This is the whole trick, so don’t skip it. Dipping rice paper in beaten egg instead of soaking it in water gives you that chewy, sturdy wrapper plus a little extra richness. Coat each strip one at a time so they don’t stick together into a clump.

Layer strips for structure

Stacking three egg-dipped strips before you fill and roll gives these enough body to hold their shape without tearing. A single sheet is just too flimsy and can split on you as the cheese melts.

Roll tight and do not overfill

The most common rice paper roll mistake? Cramming in way too much filling, which makes them burst open. Keep it to a half slice of cheese and half a slice of ham, then roll snugly from one end so everything stays tucked in nice and tight.

Want them crispier? Add heat

These ham and cheese rolls lean a little more indulgent thanks to all that cheese, sure, but they’re still portion-friendly and protein-packed for a snack. Storage and Leftovers

These rolls are at their absolute best hot and fresh, right when the cheese is still gooey. That said, leftovers keep in an airtight container in the fridge for up to two days. Reheat them in the air fryer or a hot oven, never the microwave, which turns the rice paper sad and rubbery. A few minutes at 375F brings back some of that crisp edge.

Instructions

  1. Preheat the oven to 375F. Use kitchen scissors to cut each rice paper sheet into 3 long strips.
  2. Beat the eggs in a bowl. Dip 3 rice paper strips into the egg one at a time and layer them on a cutting board.
  3. Cut a slice of pepper jack in half and lay the pieces on the stacked strips.
  4. Tear a slice of ham in half and lay it on top of the cheese.
  5. Starting from one end, roll everything up tightly. Repeat for the remaining rolls.
  6. Sprinkle some shredded mozzarella into a small baking pan, place the rolls in, and sprinkle more mozzarella on top.
  7. Bake for 15 minutes, until the cheese is melted and golden at the edges.
  8. Let them cool for a minute, then serve warm.

One change I’d make next time: run them through the air fryer instead of the oven. The flavor is already where I want it, but a bit more crunch on the outside would push these over the top.

As they are, they’re a solid snack or a quick lunch, and there’s no oil to deal with afterwards. 🙌
