I found this Japanese rice paper trick online and my first thought was, obviously I need to make this with Chinese sausage and cheese. These rice paper sausage rolls make a killer quick snack, and the secret is dipping the sheets in egg instead of water. That one swap changes everything. Instead of a soft, chewy wrapper, you get a shell that comes out of the air fryer golden and CRAZY crispy, and the sweet-savory Chinese sausage with gooey mozzarella inside? Whew. Five ingredients, fifteen minutes, done!

What Makes These Rice Paper Sausage Rolls So Good

The filling combo is legit. Lap cheong has a naturally sweet-savory thing going on that pairs SO well with melted mozzarella. When you bite in, the cheese stretches and the sausage is just slightly glossy inside that crispy shell. Really satisfying contrast.

The double-layer egg-dipped rice paper is what creates the seriously crispy exterior. Stack two sheets, fold the edges into a square, and that thick shell holds everything together through the air fry without tearing. Each roll is essentially a savory pocket of melted cheese and sausage with maximum crunch on the outside.

Tips for Making Rice Paper Sausage Rolls

Use egg, not water

Traditional rice paper rolls get dipped in water to soften them for wrapping fresh fillings. Here you’re doing the opposite. Dip each sheet in beaten egg instead. The egg creates a coating that gets ultra crispy in the air fryer. This is the same egg-dip method I first discovered when I made my Rice Paper Croissant, where the sheets puff up and get this wild crispy exterior with a chewy interior. The egg coating is what takes these from good to unreal.

Stack two sheets per roll

One sheet alone isn’t quite sturdy enough to hold a full sausage without tearing. Stack two egg-dipped sheets together and fold the edges inward before adding the filling. I use the exact same double-layer method in my Spicy Ramen Spring Rolls, where the doubled shell holds a full nest of Buldak noodles and mozzarella without splitting at the seams. Once you’ve got the fold-and-wrap motion down, assembly is quick.

How Long Do You Air Fry Rice Paper Sausage Rolls?

Air fry at 350°F for 8 minutes. No flipping required. They should come out golden with a crispy exterior all over. If your air fryer runs hot, check at 7 minutes. Stick close to the 8-minute mark so the edges don’t over-brown.

What Kind of Meat Goes in Rice Paper Sausage Rolls?

Chinese sausage (lap cheong) is what I used here, and that natural sweetness is so good with the mozzarella. But these also work great with regular pork breakfast sausage links, chicken sausage, or even mini hot dogs if that’s your vibe. Just make sure whatever you use is precooked or thin enough to cook through in 8 minutes.

Storage and Leftovers

These are best straight out of the air fryer when they’re at peak crispiness. If you have leftovers, store them in an airtight container in the fridge for up to 2 days. Reheat in the air fryer at 350°F for 3 to 4 minutes to bring the crunch back. Microwave works in a pinch but the texture softens a lot.

Instructions

  1. Beat the Eggs in a bowl. Dip each sheet of rice paper in the egg, then stack two sheets together. You should have two double-layered sheets.
  2. Fold the edges inward to form a square shape.
  3. Fold a slice of Mozzarella (Sliced) in half and lay it on the rice paper, then place a Chinese sausage over the cheese.
  4. Fold the corners of the rice paper up and over the filling to wrap everything up. Lightly brush the surface with Avocado Oil.
  5. Air fry at 350°F for 8 minutes or until golden and crispy.
  6. Enjoy!

Chinese sausage is the right call here because it’s already sweet and savory on its own, so there’s nothing to season. It renders a little as it heats and that fat ends up in the cheese, which is the best part of the whole thing.
