Description

These crispy rice paper wings wrap chicken wings in water-softened rice paper before frying, so they fry up with a shatteringly crunchy, no-flour shell and a bold Korean BBQ rub.

Ingredients

Scale

Instructions

  1. Season the wings. Pat the wings dry, then toss them in a large bowl with the 1 tsp vegetable oil. Add the Korean BBQ rub and toss again until evenly coated.
  2. Cut the rice paper. Cut each of the 5 rice paper sheets in half with kitchen scissors so you have 10 half-sheets.
  3. Wrap each wing. Fill a bowl with water. Dip one half-sheet in the water and, once it softens and turns pliable, wrap it snugly around a wing. Set it aside and repeat with the rest.
  4. Heat the oil. Pour vegetable oil into a small pot to about 2 inches deep and heat it to 350F using a kitchen thermometer.
  5. Fry in batches. Fry two wings at a time until golden brown and crispy, about 3 to 5 minutes. The rice paper puffs up while frying and settles back against the wing; if any part sticks up above the oil, flip it after a minute or two.
  6. Drain and serve. Drain on a rack or paper towels, then serve hot.

Notes

  • Dip the rice paper just until pliable; oversoaking makes it tear and bunch when you wrap.
  • Wrap each wing snugly so there are no loose flaps to poke above the oil.
  • Hold the oil steady at 350F: too cool turns the shell greasy, too hot browns it before the chicken cooks.
  • Fry only two wings at a time so the oil temperature stays up.
  • Best eaten fresh; re-crisp leftovers in the air fryer or a hot oven, never the microwave.
