S’mores without the campfire, the sticky fingers, or the mosquito bites? Yes please. This s’mores crunchwrap folds jumbo marshmallows, a graham cracker, and a chocolate bar inside a flour tortilla, then pan-fries it until crispy and golden before a roll in cinnamon sugar. It’s everything you love about s’mores in a handheld, crunchy, gooey package, ready in about 10 minutes. SO good.

I first spotted the s’mores crunchwrap idea over on @dowellcooks, and I knew right away I had to make my own version. His recipe content is awesome, so go give him a follow if you haven’t already.

What Makes a S’mores Crunchwrap So Good

It all comes down to contrast. You get a crisp, cinnamon-sugared tortilla shell on the outside and a molten center of marshmallow and chocolate on the inside, with the toasty crunch of graham cracker running through it. Every single bite hits sweet, crunchy, and gooey all at once.

How Do You Fold a Crunchwrap So It Stays Closed?

Fold the edges of the large tortilla up and over the filling in overlapping pleats, working your way around the circle until everything’s enclosed, then cook it seam-side down first. The weight of the crunchwrap plus the heat presses those folds together and seals them shut. Easy.

That little tortilla in the center is what gives you a flat surface to fold against, so don’t skip it. Cook the pleated side first for 2 to 3 minutes until golden and set before you flip, and it’ll hold together beautifully.

Can You Make S’mores Without a Campfire?

Yes, you absolutely can make s’mores without a campfire, and this crunchwrap is proof. Pan-frying melts the chocolate and marshmallows in the same gooey way a fire would, no fire pit or skewers required. No smoky sweater smell either.

Do You Use Mini or Jumbo Marshmallows?

Jumbo marshmallows are the move here. They give you those big, gooey molten pockets that ooze when you bite in, and they hold their shape way better than minis while the crunchwrap cooks.

Only have mini marshmallows? Just pack in a generous single layer so you still get plenty of melt. Either way, the marshmallow is the heart of a good s’more, as Food52 breaks down in their guide to s’mores.

Tips for Making a S’mores Crunchwrap

1. Warm the tortilla first

A cold tortilla cracks the second you try to fold it. Microwave it for 10 to 15 seconds so it’s soft and pliable, and the pleats will hold without splitting.

2. Keep the heat at medium

Medium heat is key here. Too hot and the tortilla burns before the marshmallows even melt. Too low and it turns leathery instead of crispy. You’re going for golden brown and crunchy with a molten center.

3. Coat in cinnamon sugar while warm

Mix the sugar and cinnamon together, then press the crunchwrap into it right after it comes off the heat, while the surface is still a little tacky so it clings. A light spritz or brush of butter helps it stick.

4. Let it rest a minute before biting

Give it a minute after cooking. Molten marshmallow and chocolate are basically lava straight out of the pan, and a short rest lets the filling set just enough to hold together when you cut in. Trust me on this one.

Storage and Leftovers

S’mores crunchwraps are best fresh and hot, when the shell is crispy and the center is gooey. They don’t really store well, since the tortilla softens and the marshmallow firms up as it cools.

If you do have to reheat one, skip the microwave (it turns everything rubbery) and use an air fryer or dry skillet for a couple of minutes to bring back the crunch. They really are best made to order. If you want more quick s’mores fixes, my strawberry s’mores come together just as fast.

Use any chocolate bar you love here. A dark chocolate bar or even a peanut butter cup layer are both great swaps. And mini marshmallows work in place of jumbo if that’s what you’ve got on hand.

Instructions

  1. Place the jumbo marshmallows in a square in the center of the large tortilla.
  2. Top with the graham cracker, then the Hershey’s chocolate bar.
  3. Place the small tortilla on top of the stack.
  4. Fold the edges of the large tortilla up and over in overlapping pleats to enclose everything.
  5. Lightly spray a pan with cooking oil and place the crunchwrap folded (small tortilla) side down over medium heat. Cook for 2 to 3 minutes until golden brown and the folds stay sealed.
  6. Flip and cook the other side for another 2 minutes until golden brown.
  7. Mix the sugar and cinnamon together and coat the outside of the warm crunchwrap.
  8. Let it rest for a minute, then enjoy.

The best part is that this all happens on a stovetop, so it isn’t a summer-only thing. You can make a s’more in February without having to explain yourself to anybody.

It’s also a lot less mess than the real version, which anyone who has toasted a marshmallow over an actual fire will appreciate. 🙌
