Spam mochi musubi is a rice-free twist on classic Hawaiian Spam musubi. You air-fry cut kirimochi until it puffs slightly crispy outside and stays warm and chewy inside, then top it with Spam glazed in Japanese BBQ sauce and wrap it in nori. It comes together in about 15 minutes with just a handful of ingredients.

I grew up eating Spam musubi as the ultimate grab-and-go snack, the kind that shows up at every potluck and beach day. One afternoon I had a package of kirimochi sitting in the pantry and no cooked rice on hand, and it hit me… why not swap the rice block for a piece of chewy, blistered mochi? The first bite sold me. That taffy-like pull under the savory Spam is a whole different experience.

What Makes Spam Mochi Musubi So Good

The whole thing hinges on texture contrast. Kirimochi puffs up dramatically in the air fryer, going from a hard little brick to a pillowy, chewy cloud with crisp edges. The Spam gets glazed in Bachan’s Japanese BBQ sauce until it is glossy and a little sticky, and a shake of shichimi togarashi adds a gentle, tingly heat. Wrapped in nori, every bite is chewy, savory, sweet, and just spicy enough. What Is Spam Musubi Made Of?

Classic Spam musubi is a slice of grilled Spam pressed onto a block of seasoned rice and wrapped with a strip of nori, often glazed with a soy-based sauce (Hungry Huy has a great rundown of the traditional version). This mochi version keeps the Spam and nori but trades the rice for air-fried kirimochi, so you get a chewier, crispier base instead of the usual soft, sticky rice. Is Musubi Filipino or Hawaiian?

Spam musubi is Hawaiian, born from Japanese onigiri and Hawaii’s deep love of Spam that dates back to the World War II era. The word “musubi” itself comes from Japanese, and this snack is a perfect example of Hawaii’s Japanese-American food culture, which is exactly the lane this mochi twist plays in.

Tips for Making Spam Mochi Musubi

1. Give the kirimochi room to puff

Air-fry the kirimochi at 400 degrees F for about 6 minutes, flipping halfway through, so both sides blister and crisp evenly. Mochi expands a lot as it heats, so leave space between the pieces in the basket instead of crowding them.

2. Glaze the Spam, do not drown it

Add the Bachan’s sauce to the pan with the Spam and let it cook down for a minute or two per side until it clings in a sticky glaze. A thin coat caramelizes and browns; too much just pools in the pan and steams the Spam instead of searing it.

3. Season the mochi while it is hot

Sprinkle the shichimi togarashi on right when the mochi comes out of the air fryer, while the surface is still tacky, so the spice actually sticks. If you wait until it cools, the flakes just slide off.

4. Cut the nori with clean, dry scissors

Snip the half sheet of nori into two thin strips with kitchen scissors so each piece wraps neatly around the Spam and mochi. Dry scissors keep the nori from tearing or turning gummy.

5. Assemble and eat right away

Spam mochi musubi is best the moment it is built, when the mochi still crunches and stretches and the nori is crisp. It firms up fast as it cools, so plate it and dig in immediately.

Storage and Leftovers

This is a make-and-eat-now snack. Mochi hardens quickly as it cools and doesn’t reheat gracefully, so it is best to make only as much as you’ll eat in one sitting. If you do have leftovers, store them airtight at room temperature for up to a day and revive the mochi with another 2 to 3 minutes in the air fryer to soften and re-crisp it before adding fresh nori. Uncooked kirimochi keeps for months in the pantry, so it’s a great thing to stock for a fast snack anytime. Kirimochi (shelf-stable cut mochi) is the whole shortcut here. No air fryer? Pan-fry the pieces in a dry nonstick skillet over medium heat, turning until they puff and blister. Any Japanese BBQ sauce works if you can’t find Bachan’s, and you can swap the shichimi togarashi for a pinch of chili flakes.

Instructions

  1. Cut two slices of Spam. Place them in a pan over medium heat, add the Bachan’s sauce to taste, and cook each side for a minute or two until glazed and sticky. Set aside.
  2. Remove the kirimochi from the packaging and air-fry at 400 degrees F for 6 minutes, flipping halfway through. While it cooks, cut the sushi nori sheet in half, then cut one half in half again to make two thin strips.
  3. Once the kirimochi is puffed and lightly crisp, top each piece with shichimi togarashi and a slice of glazed Spam.
  4. Wrap a strip of nori around the Spam and mochi, and serve right away.
