Description
Spam mochi musubi is a fun rice-free twist on the Hawaiian classic: air-fried kirimochi topped with saucy glazed Spam, a shake of shichimi togarashi, and wrapped in nori. Slightly crispy, warm, and chewy in about 15 minutes.

- 2 pieces kirimochi (cut mochi)
- 2 slices spam
- Bachan's Hot and Spicy Japanese BBQ Sauce (to taste)
- shichimi togarashi (to taste)
- 1/2 sheet sushi nori

- Glaze the Spam. Cut two slices of Spam, place them in a pan over medium heat, add the Bachan’s sauce to taste, and cook each side for a minute or two until sticky. Set aside.
- Air-fry the mochi. Air-fry the kirimochi at 400 degrees F for 6 minutes, flipping halfway. While it cooks, cut the nori sheet in half, then cut one half in half again for two thin strips.
- Season and top. Top each puffed mochi piece with shichimi togarashi and a slice of glazed Spam.
- Wrap and serve. Wrap a strip of nori around the Spam and mochi and enjoy right away.
Notes
- Give the kirimochi space in the air fryer basket so it puffs and crisps evenly on both sides.
- Use a thin coat of sauce so the Spam caramelizes instead of steaming.
- Sprinkle the shichimi togarashi on while the mochi is hot so it sticks.
- No air fryer? Pan-fry the mochi in a dry nonstick skillet until puffed and blistered.
- Serve immediately; mochi firms up quickly as it cools.
