Special K marshmallow treats are a no-bake dessert that swaps the usual crisped rice for Special K Red Berries cereal. You melt butter and marshmallows, fold in the berry-studded cereal, press it flat, then dip or drizzle with melted chocolate. The freeze-dried strawberries plus chocolate taste just like chocolate-covered strawberries in a chewy, crunchy square.
I’ve made a lot of marshmallow treats over the years, and this might be my favorite batch yet. The chocolate melting into those little bits of freeze-dried berry gives you that chocolate-covered strawberry thing, except in a chewy, crunchy square you can eat with one hand. My family cleared the pan before it fully set, which is usually how I know a recipe is a keeper.

What makes these Special K marshmallow treats so good
You get the best of a few worlds in one bite. There is the gooey marshmallow chew, the light crunch from the Special K flakes, and little pops of tart berry that cut right through the sweetness. Then the chocolate coating sets into a snappy shell on top.
They are also stupid easy. Four ingredients, one pot, no oven, and about 20 minutes of hands-on time. If you’ve ever made my Biscoff marshmallow treats or worked through my 3 must-try Rice Krispies treats, you already know the method by heart.
What makes Special K marshmallow treats taste like chocolate-covered strawberries?
The freeze-dried strawberries and raspberries already baked into Special K Red Berries do all the work. When those tart berry pieces meet the melted chocolate coating, you get the exact sweet-and-tart combo of a chocolate-covered strawberry, just in a crispy, chewy bar instead of a whole fruit. It’s the same idea behind my frozen berry yogurt clusters.
If you love that tart berry and sweet marshmallow combination, these Fluffy Homemade Raspberry Marshmallows are a great next adventure made completely from scratch, and just as easy to customize.
Dark or semisweet chocolate leans into that jammy strawberry note best, but milk chocolate makes them taste more like a candy bar, which is never a bad problem to have.
Can you use regular Special K instead of Red Berries?
Yes, plain Special K works, you’ll just lose the berry flavor and the pink flecks. To bring the strawberry taste back, toss a handful of crushed freeze-dried strawberries into the cereal before you fold in the marshmallow. You can also use this same base with almost any flaky cereal or even crackers… just look at my Cheez-It marshmallow treats for a sweet-and-salty version!
How do you keep marshmallow treats from turning hard?
Keep the heat low and don’t overpack them. Marshmallow treats turn hard for two reasons: the marshmallows get cooked too hot, and the mixture gets pressed down too firmly. Melt everything over low heat, take the pot off the burner as soon as the marshmallows are smooth, and press the mixture into the pan just until it holds together. The Kitchn breaks down the same low-and-slow logic for classic treats, and it holds true here.

Tips for the best Special K marshmallow treats
1. Melt low and slow
Butter first, then marshmallows, always over low heat. High heat is what makes the finished bars stiff and dry instead of soft and chewy.
2. Work fast once the cereal goes in
Melted marshmallow starts setting the second it leaves the heat. Have your pan lined and ready so you can fold in the cereal and press it out before it stiffens.
3. Use fresh marshmallows
An old, half-open bag of marshmallows never melts as smoothly. A fresh 10 oz bag gives you that clean, glossy melt and the best chew.
4. Press with parchment, not bare hands
Lay a second sheet of parchment on top and press the mixture flat with that. It keeps your hands clean and stops you from mashing the treats too dense.
5. Let the chocolate set fully
Give the dipped or drizzled chocolate 10 to 15 minutes to firm up (the fridge speeds it along) so you get that clean snap instead of a smear. The freeze-dried berries in Two Peas and Their Pod’s strawberry treats are handled the same careful way.
Storage & leftovers
Store the treats in an airtight container at room temperature for up to 3 days. Keep them out of the fridge, since cold air dries marshmallow treats out and makes them hard. If you stack them, slip a piece of parchment between the layers so the chocolate doesn’t stick.
You can freeze them for up to 6 weeks in a sealed container. Thaw at room temp for about 15 minutes before eating. These travel well too, so they’re an easy pick for a potluck-style dessert alongside something like my ube Rice Krispie treats for a colorful dessert spread.

Equipment
Ingredients
- 3 tablespoons unsalted butter
- 10 oz marshmallows (about one bag)
- 5.5 cups Special K Red Berries cereal
- 10 oz chocolate melting wafers (dark, semisweet, or milk)
Substitutions: plain Special K plus a handful of crushed freeze-dried strawberries stands in for the Red Berries. Chocolate chips melt fine if you don’t have wafers, just add a teaspoon of oil so they pour smoothly. For a shortcut version like my strawberry s’mores, swap the chocolate coating for a quick drizzle only.
Instructions
- Melt the butter in a large pot over low heat.
- Once the butter melts, pour in the marshmallows and stir occasionally until fully melted and smooth. Remove the pot from the heat.
- Add the Special K Red Berries and fold gently until every flake is coated in marshmallow.
- Transfer to a parchment-lined baking pan. Lay a second sheet of parchment on top and press the mixture flat and even. Set aside to cool for 10 to 15 minutes, then cut into pieces.
- Microwave the chocolate melting wafers in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth. Near the end, drop to 10-second bursts so you do not scorch it.
- Spoon some melted chocolate into a piping bag (or a zip-top bag with a tiny corner snipped) for the drizzle. Drizzle the treats, or dip the pieces straight into the bowl of chocolate for full coverage.
- Let the chocolate set for 10 to 15 minutes, then dig in.
If you make these, I would love for you to leave a star rating on the recipe card below and drop a comment telling me whether you went dip or drizzle. It really helps other readers find the recipe.
