This spicy garlic mayo ramen turns a packet of noodles into a creamy, garlicky, gently spicy bowl that tastes like way more effort than it takes. What Makes This Spicy Garlic Mayo Ramen So Good

The whole idea works because you’re emulsifying fat into the starchy noodle water, the same move that makes a good carbonara silky. Mayo is basically oil and egg, so when you whisk it into hot ramen water, it turns into this creamy, glossy sauce that clings to every single noodle. That’s the magic, and I love that it takes zero special skill.

But the reason I keep making THIS one is the mayo itself. Auntie Rana’s Naga Garlic Mayo is loaded with garlic and a slow, building heat from Naga chilis, so you get creamy, spicy, and deeply savory all at once. 1. Use the hot noodle water, not fresh water

Save half a cup of the starchy water the noodles cooked in. That starch is what helps the mayo emulsify into a creamy sauce instead of a greasy puddle. Fresh water just won’t do the same thing.

2. Build the sauce in the bowl

Mix the mayo, seasoning packet, sesame oil, and egg together right in your serving bowl before the noodles go in. That way the sauce is ready and evenly combined the second that hot water hits it.

3. Go easy on the seasoning packet

Instant ramen packets are salty, and the mayo adds plenty of richness and savor on its own. Start with the full packet, but taste before you add anything extra. You can always stir in more.

4. Add heat to taste

Instead, whisk it into the mayo and seasoning in your bowl OFF the heat, then slowly pour in the hot noodle water while stirring the whole time. Adding the hot liquid gradually raises the egg’s temperature bit by bit, so it thickens the sauce into something creamy and custardy instead of seizing into scrambled bits. Keep stirring, don’t let it sit, and you’ll get a smooth, glossy bowl every time!

Storage and Leftovers

Ramen like this is a right-now food. The noodles keep drinking up sauce and go soft, and a creamy broth doesn’t reheat gracefully, so I’d make it fresh every time.   • Instant ramen: any packet works. A spicy Korean packet like Shin Ramyun adds extra depth, but a classic chicken or tonkotsu-style packet is a milder, cleaner base for the garlic mayo to shine.
  • The egg: it makes the broth extra silky, but you can leave it out for a lighter bowl (that’s the mayo ramen no egg route a lot of people take). Or go the other way and top it with a jammy soft-boiled egg instead.
  • Sesame oil: chili oil or a neutral oil both work here. Sesame just adds that toasty, nutty note I love with the garlic.

  4. Add the noodles. Use chopsticks to transfer the cooked noodles into the bowl, and toss to coat them in the creamy sauce. Stir in more noodle water if you want it looser.
  5. Top and serve. Add chopped scallions, and drizzle Auntie Rana’s Smokey Chili Oil or your favorite chili oil on top for extra heat. Eat it right away!
