Units
Scale
- 1 package instant ramen, such as shin ramyun
- 1/4 cup water
- 2.5 tbsp soy sauce
- 1 tbsp light brown sugar
- 3 tbsp sesame oil
- 4 garlic cloves, minced
- 2 green onion stalks, whites and greens separated
- 2 tbsp gochugaru (Korean red chili pepper flakes)
- sesame seeds, to taste
Equipment
Instructions
- Cook the noodles. Boil water and cook the instant ramen per the package, then drain well in a strainer and set aside.
- Make the sauce. In a small bowl, combine the water, soy sauce, and brown sugar. Chop the green onions and separate the white and green parts.
- Build the base. In a large skillet over medium heat, add the sesame oil, then the garlic and white green-onion pieces. Stir and cook for one minute.
- Add the sauce. Pour in the soy sauce mixture, stir, and cook for two minutes.
- Spice it. Stir in the gochugaru.
- Toss. Add the drained noodles and toss until fully coated.
- Serve. Transfer to a bowl and top with sesame seeds and the green onion tops.
Notes
- Drain the noodles thoroughly so the sauce stays glossy, not soupy.
- Separate the green onion whites (for the oil) from the greens (for garnish).
- Cook the garlic just until fragrant. Burnt garlic turns bitter.
- Start with 1 tbsp gochugaru for mild, 2 tbsp for a solid kick, or add gochujang for more.
- Any ramen or udon works, instant or frozen.
- Serve right away, while the noodles still have their chew.
