You know how chocolate-covered strawberries are SO good? This strawberry blueberry chocolate bark takes that exact same vibe and makes it even more accessible. No dipping station, no individual fruit coating. You melt an entire bag of Nestlé Toll House chocolate chips right inside the sealed bag using a hot water bath, dump the berries in, clip it shut, and refrigerate for an hour. Three ingredients. One bag, one clip, one knife.

What Makes This Strawberry Blueberry Chocolate Bark So Good

The hot water bag method is the WHOLE thing here. You don’t need a double boiler, a microwave, or any special equipment. A kettle set to 175°F and a high-rimmed pan is all it takes to melt the chocolate slowly and evenly inside the sealed bag. Then the bag itself becomes the mold. You skip an entire step compared to regular bark recipes.

The strawberry and blueberry combo gives you two kinds of fruit in every bite, and you can throw in raspberries too if you want even more variety. Raspberries would also be hella good in there. Three ingredients total, and the prep before refrigerating is minimal. For another three-ingredient chocolate fix, my 3-ingredient Nutella brownies come together from a jar of Nutella, a few eggs, and some chocolate chips, with zero flour and the fudgiest texture you’ve ever pulled out of the oven.

How to Make Chocolate Bark Using the Hot Water Bag Method

Fill a high-rimmed pan with hot water from a kettle set to 175°F. Drop the sealed bag of chocolate chips in. Let it sit for 2 minutes, take it out and squish it around to start mixing, then put it back for another 2 minutes. Repeat until you don’t feel any solid chips left in the bag. That’s it. Cut the bag open at one end, add your berries and any other mix-ins you want, reseal with a long bag clip, and refrigerate for about an hour until solid. Nestlé Toll House chips (the 11.5 oz bag) are the exact size for this recipe and melt reliably with this technique.

Tips for Making the Best Strawberry Blueberry Chocolate Bark

1. Use a temperature-controlled kettle if you have one.

The caption specifically mentions setting the kettle to 175°F. That level of control matters: too hot and the chocolate can seize, too cool and it won’t melt fully. If you just have a stovetop, heat the water until it’s hot but not boiling and you’ll get close enough.

2. Work fast once the bag is open.

Once the chocolate is melted and you cut the bag open, add the berries quickly. The chocolate starts cooling as soon as it hits air, and you want the berries distributed before it begins to set.

3. Make it on a cool day.

Robby made his on a hot day with no AC and they melted as soon as he touched them. The bars typically come out much smoother when you’re working in a cooler environment. The taste is exactly the same either way, just the look changes.

4. Switch up the fruit.

Strawberries and blueberries are the move here, but raspberries would also work great. You can also add chopped nuts, pretzel pieces, or granola for texture contrast. My chocolate-covered frozen yogurt bites use a similar berry-and-chocolate pairing and are another low-effort sweet snack worth having in the fridge.

5. Refrigerate, don’t freeze.

About an hour in the fridge is all you need for it to fully set and hold its shape when you cut it.

What Toppings Go on Chocolate Bark?

Beyond berries, the classic mix-ins are: chopped nuts (pistachios, almonds, pecans), flaky sea salt, crushed pretzels for a salty-sweet thing, coconut flakes, dried fruit, or granola. The key is keeping the toppings proportional so there’s enough chocolate to hold everything together. If you love fruit-and-chocolate combos, my chocolate-covered mandarin oranges are another easy recipe where the cold, juicy fruit against the snapping chocolate coating is seriously next level.

Storage and Leftovers

Keep the bark refrigerated in an airtight container. It holds up well and is ready to grab straight from the fridge.

  4. Refrigerate for about 1 hour, or until completely solid.
  5. Remove from the fridge. Take off the clip and peel the bag off the chocolate slab. Use scissors to get it started if needed.
  6. Cut into pieces with a kitchen knife and enjoy!

Full transparency, mine looked messier than they should have. I made these on a hot day in an apartment with no AC, so they started softening the second I touched them. Yours will set up a lot smoother than what you’re looking at.

It’s the easiest possible version of a chocolate and fruit dessert, and you can throw in whatever berries you’ve got going. 🙌

If you make this, drop a star rating on the recipe card and leave a comment with what fruit combo you tried. Raspberries in there have to be incredible.

Instructions

  1. Melt the chocolate. Fill a high-rimmed pan with hot water from a kettle set to 175°F. Place the sealed bag of chocolate chips in the water for 2 minutes. Remove, squish around to mix, return to the water for another 2 minutes. Repeat until fully melted with no solid chips. While waiting, slice the strawberries.

Notes

  • A temperature-controlled kettle at 175°F gives the best results. Too hot and the chocolate can seize; too cool and it won’t melt fully.
  • Work fast after cutting the bag open. The chocolate cools quickly once exposed to air.
  • Raspberries work great in place of (or in addition to) the blueberries if you want more tartness.
  • Store refrigerated in an airtight container.
  • The bars may look a little messier if made on a hot day. The taste is the same; they typically come out smoother in a cool environment.
