They come out chewy and sweet in the middle with a crispy, nutty sesame crust, and the best part’s that they’re naturally sweetened and colored by the sweet potato itself, no food coloring in sight. Just sweet potato, sweet rice flour, a little sugar, and white sesame seeds, then straight into the air fryer. They’re basically a lighter, four-ingredient riff on classic Chinese sesame balls, and I may or may not have eaten like 4 in a row the first time I made them. Chewy, crispy, and CRAZY easy. My kind of snack.

What Makes These Sweet Potato Sesame Balls So Good
It’s that chewy-meets-crispy contrast. The sweet rice flour gives the inside a soft, stretchy, mochi-like chew, while the sesame seed coating toasts up in the air fryer into a crunchy, nutty shell. Every bite’s got both textures going at once.

How do you make sweet potato balls?
Roast a sweet potato until it’s soft, mash it smooth, then work in sweet rice flour a little at a time until it forms a moist, kneadable dough. Roll that into balls, coat them in white sesame seeds, and air fry. The sweet rice flour (sometimes labeled glutinous rice flour or mochiko) is what makes them chewy instead of crumbly, and it’s worth using the real thing. Why are my sesame balls falling apart?
If your dough’s cracking or the balls are crumbling, it’s almost always a moisture issue. Add the sweet rice flour gradually and stop when the dough’s moist and holds together in a smooth ball, if it feels dry and crumbly, your sweet potato needed a touch more moisture or a little less flour. When you coat them, roll each ball firmly between your palms after the sesame seeds go on so the coating presses in and stays put. A gentle, careful roll keeps them from splitting in the air fryer.

Tips for Making Sweet Potato Sesame Balls
1. Roast the sweet potato until it is really soft
Poke it with a fork, wrap the pan in foil, and bake at 400F for 45 to 60 minutes until a fork slides straight through. A fully soft potato mashes smooth and it’ll mix into the flour evenly. Any firm spots’ll leave lumps in the dough.
2. Add the flour little by little
Sweet potatoes vary in moisture, so don’t dump all the flour in at once. Add it gradually and knead until you’ve got a soft, moist dough that isn’t sticky. That’s how you dial in that perfect chewy texture.
3. Roll the coating in firmly
After rolling the balls in sesame seeds, give each one a gentle press-and-roll in your hands so the seeds embed into the surface. They won’t fall off that way, and it helps them toast into a solid crust.
4. Use the two-temperature air fryer method
Start low at 250F for 10 minutes to set the dough gently, then bump it up to 350F for another 6 minutes to crisp and toast the sesame crust. That low-then-high move gives you crispy outside and chewy inside and you’re not burning the seeds. It’s the same crispy-outside, chewy-inside payoff I chase in my air fryer isobeyaki mochi.
5. Serve them warm
These are best a few minutes out of the air fryer, while the center’s still warm and at its chewiest. Let them cool just enough to handle, then dig in.


Are sesame balls healthy?
They’re a treat, but air frying makes them noticeably lighter than the traditional deep-fried version. You’re using just a few tablespoons of sesame seeds for the crust instead of a pot of oil, and the only added sugar’s a couple tablespoons since the sweet potato does most of the sweetening. They also happen to be naturally gluten free, since sweet rice flour, sesame, and sweet potato have no wheat in them.
Storage & Leftovers
They’re at their best warm and fresh, when the shell’s crisp and the center’s chewy. Store leftovers in an airtight container at room temperature for up to a day, or in the fridge for up to 3 days. They firm up as they cool, so reheat them in the air fryer at 320F for 3 to 4 minutes to bring back the chew and crisp. - Divide the dough into about 10 pieces and roll each into a ball.
- Pour the sesame seeds into a bowl. Roll each dough ball in the seeds to coat completely, then gently roll it between your hands to press the coating in.
- Preheat your air fryer to 250F. Add the balls and cook for 10 minutes. Raise the heat to 350F and cook for another 6 minutes.
- Let them cool for a few minutes, then serve warm and enjoy!
Fair warning, I put away about four of these in a row without really meaning to. They’re small enough that it doesn’t feel like you’re doing anything, right up until the plate is empty.
The air fryer is what makes this repeatable. No pot of oil to heat up and deal with afterwards, so it stays a snack instead of turning into a project. 🙌
