Tips for Making Teriyaki Salmon Jerky
Add the sauce late, not early
Brush the teriyaki sauce on after the first few minutes, once the salmon has started to dry. Add it too soon and the sugars will burn before the salmon ever firms up.
Tear the salmon into even pieces
If your smoked salmon comes in big fillets, rip it into smaller, uniform jerky-sized pieces so everything dries at the same rate. Even pieces, even results.
Use a sauce that clings

How to Store Teriyaki Salmon Jerky
Since this uses fish rather than shelf-stable cured jerky, keep it in an airtight container in the fridge and eat it within about 3 days for the best texture and safety. Let it sit at room temperature for a few minutes before snacking so the chew comes back.
