You NEED to try this ube blended baked oats recipe! 😋
You may have seen the blended baked oats trend awhile ago, but I wanted to put my own spin on it and run it back one time because it’s legitimately delicious. 🔥
When you do it right, you get this decadent, dessert that’s moist, dense, and almost cake-like in texture. I threw in the ube extract, vanilla extract, and condensed milk to give it that ube flavoring and awesome purple color, and the chocolate chips just go so well with that earthy sweetness 💜
The recipe calls for blending half a banana into the mixture, so I like to top it with some melted white chocolate and sliced banana to tie it all together.

INGREDIENTS
1 banana
1 egg
1/2 cup instant oats
1/4 cup coconut milk
2 tbsp chocolate chips
1 tbsp white chocolate chips
1 tbsp condensed milk
1/2 tsp ube extract
1/2 tsp vanilla extract
1/8 tsp baking powder
INSTRUCTIONS:
1️⃣ Put half the banana, egg, instant oats, coconut milk, condensed milk, ube extract, vanilla extract, and baking powder into the blender and blend till it’s smooth
2️⃣ Pour into a small oven-safe bowl and place in the oven for 25 minutes at 350 degrees
3️⃣ With about 2 minutes left on the oven timer, melt the white chocolate in the microwave. Run it 30 seconds at a time, stirring with a small silicone spatula in between, until it’s completely melted.
4️⃣ Take the ube blended baked oats out of the oven and top with drizzled white chocolate and the other half of the banana sliced thinly.

Ingredients
- 1 banana
- 1 egg
- 1/2 cup instant oats

Instructions

- Bake. Pour into a small oven-safe bowl and bake at 350F for 25 minutes.
- Melt the chocolate. With about 2 minutes left, melt the white chocolate in the microwave in 30-second bursts, stirring with a small silicone spatula between each, until fully melted.
- Top. Take the baked oats out of the oven and top with drizzled white chocolate and the rest of the banana, thinly sliced.
- Serve. Enjoy warm.
Notes
- Fold the chocolate chips into the batter or scatter them on top before baking, whichever you prefer.
- Instant oats blend smoothest; rolled oats leave more texture.
