Description

These ube blended baked oats blend into a smooth batter and bake up like a warm, cakey single-serve breakfast, topped with white chocolate and fresh banana.

Ingredients

Scale

Instructions

  1. Blend. Put half the banana, egg, instant oats, coconut milk, condensed milk, ube extract, vanilla extract, and baking powder into a blender and blend until smooth.
  2. Bake. Pour into a small oven-safe bowl and bake at 350F for 25 minutes.
  3. Melt the chocolate. With about 2 minutes left, melt the white chocolate in the microwave in 30-second bursts, stirring with a small silicone spatula between each, until fully melted.
  4. Top. Take the baked oats out of the oven and top with drizzled white chocolate and the rest of the banana, thinly sliced.
  5. Serve. Enjoy warm.

Notes

  • Fold the chocolate chips into the batter or scatter them on top before baking, whichever you prefer.
  • Instant oats blend smoothest; rolled oats leave more texture.
