Description
A viral four-ingredient ube cloud bread that whips egg whites, sugar, and cornstarch into a purple meringue and bakes into a light, airy, cotton-candy-soft dome.
Ingredients
Scale
- 3 egg whites
- 2.5 tbsp granulated sugar
- 1 tsp ube extract
- 1 tbsp corn starch
Equipment
Instructions
- Preheat the oven to 300F.
- Beat the egg whites in a medium mixing bowl with a hand mixer until large bubbles start to form.
- Add sugar and ube extract and mix until small bubbles form.
- Add the corn starch and beat until you reach stiff, glossy peaks.
- Shape the dome by piling the meringue onto a parchment-lined baking pan and forming a tall mound with a spatula.
- Bake for about 25 minutes, until the outside is set and lightly springy.
- Cool briefly and eat right away, since ube cloud bread deflates quickly and is best enjoyed fresh.
Notes
- Whip to stiff, glossy peaks or the dome will bake flat.
- Use a clean, grease-free bowl and beaters so the whites whip properly.
- Use ube extract (the liquid flavoring), not ube halaya jam.
- If you double the batch, add a few extra minutes of bake time so it does not taste eggy.
- This does not store well, so make it right before you plan to eat it.
